Not a problem. It's tweaked but originally out of the N Xpress book.
4 pork chops
250ml apple juice (or cider if you're feeling bad)
1-2 tbsp wholegrain mustard
150ml creme fraiche/double cream (again depending on badness!)
1tbsp oil (garlic, sunflower, light olive etc.)- Trim the fat or rind then wrap the pork chops in cling film or a sandwich bag and bash with a rolling pin to thin a bit.
- Heat the oil then cook the chops on a medium heat for 5 minutes per side. Remove to a warm plate or wrap in some foil.
- Keep the pan over the heat and pour in the cider or apple juice to de-glaze the pan. (I use apple juice if feeding this to DS who is only 5/Cider if just DH and me.)
- Add the mustard and stir in the cream. Let the sauce cook for a few more minutes.
- Serve the sauce over the pork with veg etc of your choice.
It's a really nice quick recipe if you want something quick after work that's not pizza. The apple juice in particular adds a nice sweet note to the mustard

Made the soups and put 5 tubs in the freezer.
Thurs turned into chicken & mushroom & lo creme fraiche mixture with rice as DH bought 2 tubs of creme fraiche for the gratin and it only uses one. Decided that waistlines could do without pastry;)
Friday will be moussaka from the freezer as all the soup got frozen.
