This sounds delish! Would you mind sharing how you make this please? Also how do you consume apricot kernels? Are they ground? :)
Thanks, its just a simple supper nothing to time consuming.I batch cook a load of wholemeal pizza bases then freeze, but any base or pitta will suffice.Tomato puree, whatever hummus is about (prefer lemon & coriander). Some artichokes in oil.The apricot kernels look like almonds and are whole.Ive got a pack of chilli flavoured ones, but pine nuts are just as nice

Thanks Arran - that sounds yummy! I think I will use flaked almonds as my youngest is still at an age she might choke on whole kernels.

Hi Kitchen Bunny - it usually goes something like this: frying onion in mild and light olive oil, then adding about a tsp each of ground cumin, coriander, turmeric and smoked paprika; also about 3/4 tsp of garlic powder. I'll add some passata and coconut cream to taste, adding salt, white pepper and sugar to taste too. I usually cook the veggies separately and it will likely be chunks of carrot, potato, white cabbage and cauli florets. When done I'll just add veg to the pot along with some chopped watercress so it just wilts. Hope that makes some sort of sense :)
Love and compassion to all x
  • Hello OS'ers. As always, my week runs from today till saturday, but here it is:

    Sunday: Whoopsied chinese meal
Monday: breaded chicken with baby potatoes & veg
    Tuesday: chicken stroganoff with rice
    Wednesday: pizza and chips
    Thursday: Potato bake
    Friday: Chicken and chorizo jambalaya
    Saturday: sweet and sour chicken

It's a very chicken-y meal plan this week! For lunches we have scones, rolls and bread for various sandwich-type things, and a ton of fruit in for snacks (plus probably a banana loaf too if I gather the energy!)
