At least I won't be seeing all the tough times alone. It's taken alot for me to trust someone again so I'm quite proud of myself. :o

Beccah - glad you enjoyed it. No, I've never tried it cold - we've always eaten it as a 'main' so there has been no leftovers - but perhaps you could report back to us? It'd really start to earn it's stripes as an OS recipe if the base could have various ingredients added to it or it could be served hot or cold - don't you think?

    Greying

Reporting back.....my little taste panel ( myself, sister and friend) have given a thumbs up to the pearl barley risotto leftovers. As I'd left out the salsa, I decided that cold, the flavours needed a little zinging-up ( my personal term, of course ;)) So I added a really simple vinaigrette, a few baby spinach leaves, some left over shredded chicken and for crunch , toasted pine nuts, cucumber and peppers. I can see this becoming something of summery picnic favourite.
