    I always use semolina in my shortbread, not sure what the rice flour actually does. Maybe someone else will come along and say if you could substitute the rice flour for semolina if you have some in. I have also made shortbread with just butter, flour and sugar and that is fine too.

    Does anyone know the make of the mixer Lorraine uses? I have a cheap hand blender but hers looks so much easier, just throw in your ingredients and leave them to it!

    I think it is a kitchenaid, I also hanker after one but when DH researched it for christmas they are about £400!

    I think you can sometimes get reconditioned ones for c. £250, but still your £4 is the winner ;)

    I got a really old Kenwood Chef on eBay for £35 and it's still going strong a year later. So it may not look as pretty or be as quiet as a new one but it is 1/10th of the price!

    I am rapidly turning into a fan. The three tier celebration cake looked so easy. I've always been scared of making a cake for a special celebration even though my cakes always go down very well but after watching last night I will definitely give it a go.

    I too am lusting after Nicky's kitchenaid but it's not very:money:

    I just think it´s odd to use butter cream to cover the cake completely, then put the sugarpaste on top of that.

    Rice flour does have a similar effect on texture to semolina when used in baking. It's useful for people who have a wheat allergy and can't use semolina

    i have just popped rice flour on my tesco order as i wanted to try the shortbread again, i thought the cake looked lovely and also not too difficult to make i also would love a kitchen aid but i have a magimix can i get a dough hook for it does anyone know
