I'm probably worrying over nothing, but it makes me uncomfortable that you are allowing the buyers to stay on your property (and now in your property). Is it possible this might give them any legal rights, as squatters or something else, which they could use against you? I'd be on the phone to my solicitor to check that everything is OK if it was me - and I'd rather pay for the mum to stay for two weeks in a Travelodge than have her move into the house.0

Well if they want all these 'extras' I think it's time you get them to commit to exchanging as planned tomorrow before you do anything more for them. Once they're committed you've only got to endure all this nonsense for another few days/weeks till completion.
