Hi all - I've become the proud owner of a MR Fastbake, and held the inaugural loaf making session last night. That was a big success if a little bit salty. Today I've made a large loaf on the Fastbake cycle, but have found that far too salty.
My question - has anyone cut down on the amount of salt they add to their recipes? How much could I cut down to start with? I know it works in conjunction with the yeast so I can't leave it out altogether - or can I?

People say reduce it slightly, say 1/4 tea spoon at a time maybe. Also to only change one thing at a time. I remember reading salt is needed for the 'structure' of the bread so it can't be left out completely. I do however understand what you mean and after I get the 'fluffyness' right I plan to try and reduce it, I rarely use salt (so little I had to buy some to use the BM) so I'm not used to it either.One day I might be more organised...........

I tried to make two sandwich loaves last night, but they both came out quite heavy. It was the first time I had tried a 2lb loaf - the 1 1/2lb one came out fine. Any suggestions?"Failure is always an option"

When I make the 2lb loaf it always seems to rise far too much, so much so that the top of the loaf is pressed flat against the glass window of the breadmaker, that bit then does not cook properly and remains soggy, whilst the rest of it is fine.

Just looking into getting a breadmaker and the MR Compact one is £10 less than the fastbake... is it really worth paying the extra money??
