Named drivers can't amend anything on an insurance policy. If she did ring up and inform them of the mods, they should have told her to run along and get the policy holder.
For something as important as car insurance you should be doing it yourself, and not relying on other people. At least that way there's no comeback when it goes wrong, like it has now.0 -

You all seem to be missing the fact that the car has been STOLEN. So a loss adjuster can't come round and look at the car and see the mods, so the mods don't exist.

nor will they find any car on the database that matches the registration plate
proof of postage on the letter will mean nothing
that type of letter requires recorded delivery0 -

Can I take it from all the above posts then, that some lads stole your car, and in an effort to avoid it flagging up as stolen on police numberplate cams, replaced your legitimate numberplate with an off the shelf plate?0
