Hi! I'm with you, sell by dates are for wimps! If you insist, there's a good tradition of cheese pastry with apple pie, so give it a try. I wouldn't, but if you must, crumble the cheese into the crumble mix, before adding it to the apples.
Can we see before and after photos?

We're having HM spinach and ricotta ravioli, with olive oil and pecorrino cheese, made by small penguins. Those cheeses sounds much more appealing!!

It is quite a sweet cheese, as it's got dates and raisins in it, I think. Oh, and toffee.
Edit: I've just tried another bit to remind me what it tastes like. It's actually very, very good. But it's all wrong for everything I'd normally do with cheese. It'd be awful in sandwiches, rubbish on toast, and _pale_ with pickled onions. So if it's not a crumble or some such thing, what the hell am I going to do with it?If you lend someone a tenner and never see them again, it was probably worth it.0 -

How about sweet cheese cookies? They might even be nice!! I make normal; cheese biscuits and they are lovely ( well - the kids like them anyway!!)

No, haven't changed my mind at all, I still think a sticky toffee cheese apple crumble would be lovely. And I thought I was the one who suggested it initially? (I could be wrong, it does happen occasionally :whistle:)
Personally I would put the cheese in with the apples, but when I was suggesting a trial run for you (as others were being a tad...discouraging...:rolleyes: ) it suddenly occurred to me that you could stuff baked apples with it! Saves you all that messing around making a crumble mix
Crumble would still be nice, though....;)
P.S. The reason I am putting it in with the apples rather than with the crumble is that my vision of sticky toffee cheese apple crumble involves a soft melty cheese. I think if it's in with the crumble that there's a risk of crispy chewy cheese. Which might be nice, but isn't in my vision. :cool:Ex board guide. Signature now changed (if you know, you know).0 -

Why don't ya put the crumlbed cheese over the apples but under the crumble - then you've got the best of both worlds
I still think I'd prefer it with crackers and a crisp green apple on the side ....
and some (more) wine, of course0
