    Wow, we have so much snow down here, school is closed so DD is dying to make a snowman :) Good job I've got some carrots in the fridge, lol. So glad I don't have to dig the car out and drive anywhere for work, take care everyone who has to xx

    Oh fantasia, you poor thing - nothing bad happened because you blew things out of proportion, no one was hurt, and you found a way through, its okay!

    This might bring a smile to faces - actually, it brought a tear to my eye just now, a distant cousin sent me a link to a youtube video, I've watched it, its a good link - guerrilla music-making. Its absolutely lovely.

    Ah yes, but you forget this is Plymouth... and we don't get snow. Even when the whole of the rest of Devon and Cornwall is thick with the stuff!

    I've just checked out of the window, and its nearly all melted!

    We have to learn to be satisfied with small things.

    We don't have snow days, we just get the bus turning up 10 minutes late and going a little more slowly :)

    Crickett - I find the *only* way to get any work done from home is to turn the internet off altogether! Mind you, it takes a bit of willpower :rotfl:

    Fantasia, glad you're feeling a little better, and that you managed to get some parrot food from your friend. Is there anything else at all he'll eat while the weather is bad? Don't worry about being negative - that's what we're all here for - to help people along when they're not feeling so great. xx

    Snowing and more snowing here. Can't quite compete with your 2 foot cricket! :eek: But yesterday we were up to 9.5 inches, and it's snowed rather a lot since then, so I'll measure it later :D

    Morning my lovelies - still snowed in and DS1's school has officially been shut for Christmas (we were finishing on Friday anyways).

    The door has got another 2 ft of snow piled up against it - so we are confined to barracks.

    ........................ and Mr F is convinced its Gods way of saying knuckle down and finish all the online stuff. So thats the plan :D

    Todays "Secret Santa" - its another recipe I'm afraid (got something really cool n crafty tomorrow for you all)

    PROBABLY THE BEST MINCE PIES IN THE WORLD .....EVER!!!!

    DS1 has asked that we pull out the Chrstmas box today - a wicker basket in which I have collected Videos, DVD's. CD's, books and Xmas games. It comes out with the decorations every year and goes back on 12th night - so has great associations for him of Christmas fun. So we will have some Christmas music whilst we make these - and then settle down to watch a movie.

    This recipe makes enough pastry for about 3 dozen mince pies - so I make the whole recipe and cut into thirds, then freeze two-thirds for making more mince pies later in the festivties. Always nicer to have pastry baked fresh in my opinion. This recipe was copied about 3 years ago from the OS thread - so thanks peeps:T

    I've also used this recipe as a base for a red onion and goats cheese tart (when you've had enough of rich food and want something tasty and with a crunchy salad).

    5 onions thinly sliced into your slow cooker with a knob of butter, 1 tsp sugar and salt and pepper -set it on low an leave it on all day stirring once or twice. Spread the onions on a blnd baked tart case and top with crumbled goats cheese and bake until melted. YUM!!!

    However, back to your

    PROBABLY THE BEST MINCE PIES IN THE WORLD .....EVER!!!!

    1 lb SR Flour - yes thats right SR flour NOT plain
    8 oz trex or veg fat - or even lard
    4 oz caster sugar
    1 beaten egg
    Cold water to mix

    Put flour AND sugar into a bowl and rub in the fat until it resembles breadcrumbs.

    Mix inthe beaten egg and add water a little at a time until it makes a soft dough.

    Chill for 20 minutes.

    Roll out very thinly ( be careful as this pastry is VERY fragile) and line a dozen mince pie indents. Top with a good tsp of mince meat - and then to stop all the faff I top with a pastry star cut with a cookie cutter (can't be done with all that sealing and crimping:D)

    Brush with some beaten egg and then bake at 170 till golden and crisp - about 20 minutes.

    Make these and your house willl really smell like Christmas :)

  • Not been altogether successful on the old "turn off the bloody internet" thing yet! And have not done a spot of work so far. But definitely made the right decision about not going to work again today. Blizzard conditions outside. Hubby muttering dark things about having to clear more snow. Also my bosses boss rang me to tell me to stay at home and not attempt to come in because it is too dangerous in Nottingham at the moment. Right, really must go and work now! See you all later!
