bread rolls

white rolls:
1 1/4 cups water
1 tbsp Skimmed milk powder
2tbsp melted butter
2 tbsp sugar
1 1/2 tsp salt
3 1/4 cups strong white bread flour
1 1/2 tsp fast action yeast
use setting: 8 - dough
Once the machine bleeps to say it's finished, pre-heat the oven on gas 5 190 deg C
Knock back and knead the dough, and shape into 6 rolls (from experience, and if you wanted slightly more dainty rolls, it will easily make, 8)
place on a greased baking tray
brush lightly with melted butter (doesn;t seem to make any odds if you do this or not)
cover and leave the rise for 20 - 25 minutes until doubled in size. (We don't cover ours - just leave the tray on top of the oven for the required time)
Bake for approx 15 - 20 minutes (turn the tray round half way through if you don;t have a fan assisted oven) until browned on top.

Grrrr I've made the same mistake a few times when making white rolls. So used to putting in 400g flour for a medium loaf I sometimes automatically do the same for dough when it should be 500g.
I don't realise until the dough is ready and it is all wet and sticky, is there anything that can be done to rescue them at this stage?
Last time I baked the rolls as normal but they went very flat and chewy and didn't taste at all nice, kind of yeasty. We did try but they weren't edible as rolls. Any ideas for what else could be done with them? I thought about all the usual ways with breadcrumbs etc but was worried that the unpleasant taste would spoil a dish.

Add more flour?
Although I don't have a bread maker when I have run out of flour I have used Oats, soak up water, and protein shake, I kid you not.Buy for value not cost.

id add the flour u missed as soon as u realise perhaps the more times u make rolls the beter u will rememberonwards and upwards0

Do you reckon you can add the flour once it is already dough? Has anyone tried this? I just couldn't see how I'd be able to mix it in without making a big mess?
tessie b I was amazed to make the same mistake again after the last time! must be so ingrained in my brain.

I do.. I mix it up in the breadmaker.. twice the quantities usually.. On my "petrol" filler cap on my new car there is a sticker that says "diesel" which the manufacturer put there. How about a sticky label on your flour container that says "loaf or rolls?". when I first got my bread maker years ago I used it regularly then I sort of got out of the habit but after reading the threads on here I decided to get back into using it
I made 10 rolls today and they've all gone !!!!!!!!!!!!!!!
going to try hot cross buns tomorrow
