    I'm quite fancying baking rolls later this week myself now :D nothing better than homebaked bread!

    I was wondering if the dough would survive the freezer? or would it be better to bake the rolls then freeze?

    I freeze pizza dough ok, although it doesn't seem to have so much "bounce"
    weaving through the chaos...
  • I have been wanting to make rolls but whenever I make them they turn out too hard. Do these turn out soft?

    Well, Hubby had a day off so I left him alone with the recipe.

    Came home to a kitchen full of doughy equipment and a lot of sprinkled flour, and some amazing homebaked bread!

    He said it took longer than he had expected to rise, and the dough felt quite sticky.

    Bread was delicious (took some to work for lunch today, and have sliced some for tomorrow) but on the heavy side.

    If anyone has tips to make it lighter please pass them on.

    i'm glad the bread was nice, but from waht you've said, try

    - a bit more flour if dough is sticky, it should be smooth and elastic

    - did your hubby knead the dough properly? if not, the gluten may not have had enough time to release from the flour hence a heavier dough.

    - a dash more yeast if it was heavy after anough kneading.

    and the dough can be frozen, it's great, but freeze after rise one then when defrosted, make bread/rolls and then leave for rise 2 as usual.

    I don't eat very much bread and so have taken to buying Part-baked petit pains from Tesco and defrosting the amount I need.

    I have a breadmaker but found it wasteful to make fresh bread just for one.

    Also, I like the part-baked rolls because they are easy to count calories and I can put them into my panini press in their part-baked state to cook fresh toasted sandwiches.

    But is there a way I could make my own - which would be cheaper and would make use of my breadmaker's dough cycle and would mean I can experiment with wholegrains and seeds etc. - but how do I part-bake them? Basically the packet ones seem cooked to me, but on the pale and not crusty side :p

    Hi Annie

    I do my own part baked and i do just like you thought......i bake them but take them out before they are as brown as i like and then when they are cold i drop them in the freezer and take them out to defrost in a morning....
    I never bake bread in my machine.. i use it on dough function and then i bake it in the oven,,,

    i have a couple of bread making cook books..let me know if you are looking for any particular kind of bread and i will send them you through...
