    They did turn out ok, but couldn't get them to brown a bit more, even after leaving them in the oven for almost an extra 10min! I would actually like them to be a bit more crusty also, but was happy for a first try.

    I'm a bit fan of M&S crusty white morning rolls and am aiming for that look/taste - just in case anyone knows the ones I'm on about :D.

  • Hi, i dont know if anyone is interested but i made a very tasty mistake in my breadmaker, i was following the white roll receipe and used wholemeal and white together, and put in veg oil instead of melted butter, the result was very tasty light not doughy rolls, i left them to prove for an hour and got 7 binlids. not bad considering it will make the wholmeal flour go a lot further!;)

    Ooh, I like the tip about the veg oil, I'll try that next time! I often do half and half rolls as I'm not keen on just wholemeal bread and I know I should try harder to eat more fibre. The other thing I do is quite often make white rolls and add a couple of tablespoons of ground bran (I got mine from the whole-foods section of co-op - was about 30p for 500g) - so you then get speckly bread which is quite nice (despite the added fibre! :D)

    i make my own bread with a mix of wholemeal and white flour every couple of days and we love it. my recipe includes a little butter, which helps it to keep longer, and i've been experimenting, the last couple of days, with even less butter, melted in the microwave, but with a little veg oil stirred in, to help the butter to go further. So far it seems to be working.

    anyway my bread recipe (and a link to making rolls from the same recipe) is here if you want to take a look. Be warned, though, its all by hand, rather than a BM.

    hi i am trying to make crusty rolls with my bread maker but when i make them they dont come out like the shop ones they come out quite heavy looking the taste nice but there not the ones iam trying to make has any one got any ideas i can try i have a panasonic bm and the morphy fast bake one thanks

    Hi there

    If your recipe uses milk and water or milk powder you will get a soft crust.
    I use just warm water, flour, salt, yeast and sugar and make seriously crusty bread...
    If you want to keep using your recipe then when the rolls have nearly done in the oven..brush the tops with some salt dissolved in hot water and leave in the oven for a couple of mins and they should get crustier
    -6 -8 -3 -1.5 -2.5 -3 -1.5-3.5
  • the way i make my rolls a bit more crusty are i follow the bread maker rolls recipe, cook, then i freeze when cooled.

    when i want the rolls i then take them out and put them straight in the oven to defrost by cooking they come out lovely and crusty and warm very yummy just make sure you do not have it too high or that you then burn them leaving them in too long. Might be and idea if you have time to part defrost them then put in oven so the middle is then defrosted.

    hi thanks for your replys the crust dose come out crusty on the outside but the inside is really heavy and not bread like it more like scone type texture not sure on what im doing wrong
