  • Hi everyone,

I've been a lurker on here on and off for quite a while now, but never posted...until today!

I've searched and looked, and can't find a recipe for bread rolls anywhere? We do have a breadmaker, but it's hidden in the 'cupboard of doom' (under our stairs! ), and I don't have time to dig it out right now, so a recipe by hand would be great if anyone's got one!

I also don't have any butter, only marge, but have white bread flour, yeast, bicarb of soda, sugar, and probably more....

I can't get to the shops to get any ingredients (I'm ill, as well as it being a v.tight month!), so will have to either make something out of what I have, or think of something else... I'm making my OH a 'special meal' as he's just started a contract he's hating, so am making him home made burgers and want rolls to put them in!

Thanks in advance for your help, and for taking the time to read this! :)
  • I use this recipe from Delia. This quantity makes 12 rolls for me. Make as she says and let it have the first rise. Then shape into rolls and allow to rise on a greased baking sheet, leaving room to grow as they rise.

I also do it using half and half white and wholemeal, granary, or other speciality flour.

If you want a soft crust - dust with flour after taking out of the oven and pop a double thickness CLEAN tea owel over the top wheile they cool - it traps the steam and your rolls should be perfect!

If you cant wait then you can use any recipe (eg Pen Pen's delia one) to make fat pitta type breads - just break the dough up into 12 pieces and flatten into a rough pitta shape. Pre heat your oven to it's hottest temp and they cook on a flat sheet 3 or 4 at a time in 3 to 5 mins! - great for mini pizzas too if you have tinned toms (reduced by half with added lea and perrins and some herb) and some cheese

Another tip for pitta (or pizza) - if you have a heavy (cast iron) roasting pan or griddle - pop this onto the oven shelf and allow to pre heat - put your baking tray on this and you get a great crisp underside.
  • Thanks for the help guys!

I made using Delia's recipe, they came out pretty well, although a little brown on top and a bit crusty, but that was before I saw mattogier's tip. I'll definately try that one next time!

But even as they were, they went down pretty well and my OH was v.chuffed! :D

Do you not have the instruction book as that gives a recipe for dough for white bread rolls - you put it on the 10 setting for dough and then shape into rolls - let it rise - then bake a 180 for about 15 mins or so.
