bread buns in the bread maker

I want to make some bread buns for my little one, as they are easier to freeze and have on hand for when he has the munchies. Thing is when I made them they were more like a scone than a bread bun following the recipy in the BM handbook. I can't remember the recipy off hand but I did need to use two eggs.
Any help with a good recipy. I was thinking of just using an ordinary bread recipy on the dough setting, but didn't know if this would be too sticky? Any tips would be welcome too (I have one, don't let a three year old help to roll out the dough as they may need to go to the toilet in the middle, when everyones hands are really sticky-the dough was everywhere!!:eek: )

This is a recipe i use for our bread rolls - ive got a MR breadmachine, but im sure the recipe would work in any!!!
1 1/4 cups water
1 tbsp skimmed milk powder
2 tbsp melted butter (or oil)
2 tbsp sugar
1 1/2 tsp salt
3 1/4 strong white bread flour
1 1/2 tsp yeast
Use setting for dough.

That's the same recipe I use. When the dough is done I tip it out onto a floured surface and either tear bits off....or cut it up with a knife. Then shape into rolls....leave for a bit.....and then cook.Baby Year 1: Oh dear...on the move

Two questions, What is skimmed milk powder?-would I find that where the UHT milk is in a supermarket?
AND 2 tabsp sugar Would it not be quite sweet?

I use a similar receipe but don't put in the milk powder at all and my bread rolls work out fine.
I do put the sugar in and they don't taste sweet.
The receipe with eggs in sounds a bit like a french brioche, were they quite sweet as wella s scone like?0 -

Another recipe for you to try . This is from the Panasonic book
1 tsp yeast
500g strong white flour
1tablspn sugar
25g butter
2 tablspn milk powder
1 1/2 tspn salt
300ml water
Makes 10 - 12 rolls
Bake at 220 degC mk7 for 15 mins
I often make these rolls but I reduce the salt0 -
Marvel is the one we use for skimmed milk powder, doesn't taste very good in tea or coffee but really brings out the flavour in bread without adding extra liquid.I had a plan..........its here somewhere.0

In the interests of creating a low fat, low salt, low sugar bread, I've adapted the MR recipe and mine goes along the following lines :
1 cup Strong White bread flour
1.5 cups Wholemeal Plain flour
1 tsp quick acting Yeast
2.5ml runny honey (half a medicine spoon)
5ml sunflower oil
A third of a cup of skimmed milk
Two thirds of a cup of warm water
Approx 1 ounce of grated mature half fat cheese
Put BM on Dough cycle.
The dough will come up quite soft and wet, so its a mucky fingers job getting it out of the pan onto a VERY well floured surface. Sprinkle well with flour and, using a knife, divide up into 12-14 tiny pieces. Flour your hands and roll them into a dumpling shape. Place on a baking tray with space inbetween each, as they will rise again. I use a pizza tray as the holes make sure the middle rolls get cooked at the same rate as the outer ones. Leave in a warm place for 10-15 mins to rise again. Put a tiny knob of buttery spread or a tiny sprinkle of more cheese on top and bake at around 180deg for 10-15 mins or until you can turn one over and it sounds hollow when tapped.
Then, your biggest challenge will be to keep the family from purloining them before you're ready for them to be used! :T:hello: I'm very well, considering the state I'm in. :hello:Weight loss since 2 March 10 : 13lbs0 -

can the buns be actually cooked in the breadmaker???? as my oven isn`t working.
