  • Can you bake?

I've got a fab wedding cake recipe that I make every year as my Christmas cake. No idea of it's origins as it was passed onto me by my great-Nana! Let me know if you want it.

I'm planning on making my own wedding cake for mine.

  • The M & S plain sponge one is absolutely fantastic! Very light, and not at all dry. And someone even thought the M & S fruit one we had was home-made!

The M & S Fruit one is delicious, I've passed it off as homemade! I would recommend it, you might like to consider keeping one layer sponge & one fruit to cater for varying tastes. Sorry SammyPops but I would not recommend making home made in this instance. Too be honest to make a good quality fruit cake with icing etc good enough for a wedding........the stress alone makes it worth buying ready made but the prices are very good & competitive too. I'd really recommend this route.

  • I had plenty compliments about the 3 tier royal iced fruit cake I made for my first wedding, and I didn't find it stressful at all.

Sorry SammyPops, I hope I haven't upset you? I'm sure you're recipe is lovely & I assure you I wasn't suggesting otherwise. It all depends on the person & the wedding style of course. But Wannabe was asking about ready made cakes & my experience is just that where weddings are concerend competitively priced easy alternitives are rarely an option so grab what is available with both hands! But then I eloped for my 2nd wedding & didin't tell anyone until afterwards which should give you an idea of how stressful I found my first wedding!

  • No I'm not upset. Would take more than that to upset me ;)

I'm not that much of a stressful person to be honest! Loads of things went wrong on my first wedding day, and I didn't really get that stressed about it.

  • I've heard really good things about the M&S wedding cakes - my best friend had one which she asked her florist to put some flowers on and it looked and tasted fab.

I didn't bother with one for my wedding - people are usually too full up from the puddings and lots don't like fruit cake.

BUT, unbeknown to me, my two loopy aunties made a fantastic 'tiered' cake made up of mini cup cakes (Nigella's recipe), individually iced and decorated with little jelly sweets etc. It looked wonderful and was such a lovely surprise for me.

If you have a talented relative who has been bugging you about what they can do to help with the arrangements, maybe they'd oblige as their wedding gift to you?

    Hope that helps a bit.

    Maggie.

M&S one's are nice. Difference between their's and a home made one is the depth. Usually celebration cakes are 3" deep and M&S are just under 2". Get your florist to make up a small spray of flowers, same as in your bouquet, to go on the cake and the depth isn't noticeable. You musn't put ivy on the cake though as it is poisonous. Your florist would know this anyway.

To make one yourself you would need to ensure it is completely smooth all round otherwise it won't look too good and you would possibly not be too happy. Cost wise they're good value whereas you pay for what you want on the cake from someone who makes them either as a hobby or as a business. HTH
  • Hi we bought the Tescos fruit cake for my sons christening and I was very disappointed as it completely crumbled when we tired to cut it - it was ruined. Thats put me off Tescos!
I am getting married in July and posted about cakes a while ago as I felt the M+S cakes would work ut too expensive for me (1 need 120 portions). I have never ever heard anyone say anything bad about Markies cakes though.

I am going to make my cake with my mum. Someone on here gave me a link to Delia Smiths web site for her classic christmas cake recipie and there is a guide on there for scaling up to make bigger and smaller cakes and adjusting the cooking time. I'll let you know how I get on!
