    Well.....

    Its an american recipe... and Ive muffed it....

    Its for cornbread. I had some in America and it was LUSH, really light and airy and almost like sponge consitency....
    Ive just tried making some now but its horrid, its all gritty and stodgy..... but Im wondering if its maybe the tin i used. The recipe says to use a loaf tin, so I have....

    When I had it in the states though it was only about 2 inches high, and sliced in squares....so im thinking maybe i should use more like a square roasting tin......

    I actually hate cornbread, so I may not be the BEST American to ask, however I have seen my mom make it a zillion times.

    I wouldn't use a loaf tin - we always had ours in a square one...umm I seem to remember it being about 2 inches high and maybe 6-8" across? Did you make it from a packet or something, because I understood that cornmeal was rather hard to get ahold of over here!

    i got some cornmeal from tesco.....

    Im pretty sure i got all the measurements right.....as in its a recipe in a book.....

    I think perhaps its the tin then.....

    CAFC, sounds like maybe it didn't rise well which could be your pan. Lemme look on my American forum and see what they generally say about cornbread.

    it rose a fair bit on the top..... which is also what made me think it was my pan..... rats! wasted two piggin eggs!

    On the plus side my ginger and coffee cae is ruddy yum!!!

    Dh finally home after nit telling me he was doing overtime. Made dinner and now I am going to veggie. Bath later.

    Delain, I knew it was stupid buying them since he will wet for a long time yet. But he now hates pull ups so just got to put up with it.
