It's basically cheesey mash but its so cheap and filling that I make it a fair bit in the Winter
Make a huge saucepan of mash as normal, add about 400g of grated cheese (this is a guestimate as I use whatever is leftover in the fridge) - any cheese works well, I used Red Leicester the other week as it had been reduced in Morrisons. Anyhoo, mix the mash and cheese together well and spoon into an ovenproof (and freezerproof dish if you plan on freezing it) top with grated cheese and cook in the oven for approx. 45 mins at Gas 6 until the top of the pie turns all golden brown.
This freezes well, so if you want to do this, after topping with grated cheese, allow to cool then wrap well in kitchen foil and place in freezer. Defrost in freezer overnight beforehand for quicker cooking or cook from frozen - this will take longer though.
Anything can be added to the pie - onions, tomatoes etc but we prefer ours plain and serve with baked beans. Comfort food at its best :drool:Its nice to be important but more important to be nice!0 -
Meal Plans for us this week are:
Monday: OH - Scampi, Chips & Peas. Me - Soup (Pub Lunch for me today)
Tuesday: OH - Leftover Curry & Rice. Me - Leftover Lasagne
Wednesday: OH - Leftover Cheese & Potato Pie. Me - Leftover Spag Bol
Thursday: OH: Fishfingers, Chips & Beans. Me - Tuna, Baked Pot & Veg
Friday: Takeaway
Saturday: Pizza (didn't have last week)
Sunday: Lamb Chops, Mash & Veg
Lunches this week will be soup, egg/beef/cheese/turkey sandwiches or wraps.
Can you tell I'm trying to clear my freezer? :rolleyes:Its nice to be important but more important to be nice!0 -
I thought I would give this a go - we are (supposedly) moving in five weeks so I have cupboards and a freezer to empty.
Yesterday - roast chicken and trimmings
Monday - leftovers into chicken and leek pie (thanks to MBE/Jobbing Musician)
Tuesday - egg fried rice with chicken
Wednesday - Fish pie
Thursday - bacon, egg, n chips
Friday - shephards pie, flapjack
Saturday - (visitors) Rib of beef, garlic cream potatoes, ginger carrots and a green veg, followed by White Choc Cheesecake with blueberry sauce
Sunday - Cold beef, salad, quick chocolate and hazelnut cake
Breakfast is toast and/or cereal
Lunch is meat sandwiches, beans on toast, egg n toast soldiers (for littles), etc. Might make some soup too. OH eats in work canteen but also takes fruit.
All meals served with fresh cooked veg - at least two portions. Littles have yoghurt and/or fruit for pudding, we dont bother. W/end have SS and make pudding as they are growing teenagers.
Reading back over that I need to do a shopping list, and I have only used 3 things out of the freezer, and two lots of chocolate from the store cupboard. Might need to re-think a bit, but will give it a go.
Good to read other peoples menus and get ideas - really like the jacket suggestion. Also haven't had coca cola ham for ages - stepsons fave meal ever so I will have to sort that out for next weekend.'If you have a garden and a library, you have everything you need' Marcus Tullius Cicero0
