    Hi all,

This is quite a success - all thanks to you. On Saturday I baked 4 jacket potatoes - let them cool down then popped them in foil and into fridge. Last night fried up little bacon squares and made egg mayo - when it had all cooled mixed together.

This morning I brought one jacket potato and one serving of egg/bacon mayo - popped into microwave - yummy, especially as it's cold today!

So cost for 2 lunches for me and 2 lunches for Mr EL is - £1.00 spuds, £1.00 bacon, £0.60 eggs, £0.10 mayo & butter etc - I'd say around £0.67 per lunch - not bad!

Thanks guys - we will keep it up, but not for every day...

    Hi all,

Here is ours for this week:

    - MON - Beef stroganoff (from freezer) & rice
    - TUE - Tuna pasta bake
    - WED - Salmon, potatoes & broccoli
    - THUR - Slow cooked pork & apples (from freezer) & cous cous
    - FRI - Salmon fishcakes and sweet potato
    - SAT - Yellow chicken curry & rice
    - SUN - Tuna pasta bake

I am eating lots of fruit too, plus cooked 4 jacket potatoes in advance this week for our lunches.

What I have noticed since doing this challenge is that the money spent has gone down because I am batch cookign and getting bits from market, but so have the energy levels, which I put down to too much 'saucy' batch cooked foods. That is why this week we're having some salmon, broccoli, fruit etc. Plus plenty of water.

This is very important so a warning to all - please keep an eye on the energy levels and feeling reasonably healthy, it's more important than the budget!

How much does everyone individually spend on lunch food so I can compare?
I used to work in a gym and one of the girls in particular used to spend about £10 - a day!!! I almost went into shock at that!

I had pittas breads x2 (about 40p for 6?) and scrambled eggs ('bout 10p each?) and if I was feeling flush I would add some cheese. I used to drink all the free drinks and there used to be free fruit. And toiletries too, so I used to shower there  and there was an iron... but I'm going waay off topic!

Or beans on toast or jackets. Or porridge! To be honest, I usually went home as I stayed about 5 mins away.

    It depends on your facilities.

  • When I was working I could easily spend £5-£6 each day on lunches and breakfasts. If I was back working now and having changed to more OS ways...I would assume I could eat well on £1 a day easily.

    I would take things like:

    sandwiches
    HM quiche & salad
    HM Soup & Rolls
Left over meals (spagbol, curry, chilli, shepards pie etc)
Baked Spuds with leftovers or beans and cheese
    rice/pasta salads
    beans on toast

Do you have a microwave, toaster and kettle at work?

Hi PP - yes I have fridge, kettle and microwave at work - if you have any ideas for lunches throw 'em over

In terms of what I said in post above - what I mean is - batch cooking etc and some of the menus I have seen on this post are very low in vitamins and nutrients because they have been cooked for so long.

Things like spag bol, curry, beans on toast, jacket potatoes, sausage and mash, sheperds pie, tuna bakes, pasta - are all cheap, and lovely on occasion... but they give no energy as the nutrients/vitamins/minerals are lower in those foods.
So I'm in a connundrum as I want to save money but the only way to seemingly do that is cook food that is less nutritious (please, no one talk to me about the powers of mung beans!).

Save money, yes, have lower levels of energy for rumpy-pumpy, no :D
