    does anyone else think that programme 2 for rapid loaf makes a nicer loaf than the basic on programme 1?...i find programme 1 produces a drier loaf with a bumpy "rustic" top...but programme 2 looks like bread from an oven,perfectly smooth and rounded on top,and with an extra soft,kind of chewy texture...love it,in fact i ended up making 2 of these today instead of the cheese n onion. :)

    Yes, I agree. I just dont like the added milk powder though. I dont know what to add instead, or if I can just leave it out?

    It does make a nicer, crustier loaf with a lighter texture though:)

    It is gorgeous toasted. Big, thick slices with butter. Yum Yum!:) I always make a loaf before bed for toast next morning, Even some of my semi-failures have been good toasted.

    I'm nor sure what else it does, but bread with milk of any kind added makes better toast :)

    it doesn't actually need it though

    Might try it without to see. I need to try a wholemeal type loaf. they make the best toast in my opinion. Toast is a big deal in our house. So simple, but so yummy. If kids and partner are out I often make it for my dinner! So always on the look out for the perfect toast bread recipe. I really need to get my head round the jam making situation in the BM too. I use it that much there is no time to make jam :)

    just experiment with & without milk/dried milk & see what you like best

    I've not tried the jam making yet, I've missed the berry season here :(
  • You need to add a liquid to make the dough;you could add water instead of milk/dried milk powder + water.

    If you add water instead of milk/powder,you'll get a crustier top.

    If you are planning on making a loaf using the timer (ie not making the loaf straight off),it's best to use dried milk powder,otherwise the milk might go 'off'.

    ah im with you now. the old dear that gave me the BM even had the original destructions, so i used their recipe last night. that was water and milk powder. it did have a good crust on it but i think ill try a milk one tonight to see if its any softer.

    I have frozen berries. It won't be quite the same, but I still intend to have a bash!
    Will try with and without dried milk to see which one is best........toasted :drool:
