I emailed Wright's "Deb" and they replied with:
Hi Steve - programme 2 is great - if you can get the 2 hours 40 programme ie fool the machine into thinking it is doing a smaller loaf - medium crust is good and add a tablespoon of oil to any of the wholemeal or seedy style mixes - the addition of oil lubricates the gluten strands within the dough and usually holds everything together nicely whilst giving greater volume. The other programmes are too long for our products and cause the loaf to sink. Please measure water in a pyrex jug (not the measuring cups given with the machine).
So I'll give that a whirl and see if it helps them rise a bit.

Hi all,
I've had my BM250 for a while now, and the non stick has worn off the paddle so that when I remove it from the loaf it rips a big chunk out of the loaf.
Im wondering weather it's feasible to remove the paddle from the pan after the final knead? Does anyone do this? I guess that I would have to know the exact timings for when the final knead has finished, if anyone knows then I'd be grateful! The only thought I had was that is the machine at baking temperature by the time it's finished kneading? I don't wanna get burned!0 -
I got a BM450 for Christmas! Only made one loaf in it so far but it was absolutely gorgeous

Had to do a bit of searching to find the Kenwood thread..anyhow,mine is back in action(were decorating the kitchen,seems to be taking forever so ive just plunked it back on the worktop so i can still use it).ive made a few banana loaves recently using the realy easy panasonic recipe from here. https://forums.moneysavingexpert.com/discussion/199668 it works well in the BM450 on programme 8(cake),I mix all the wet ingredients including mashed banan in a jug then add it to BM pan)i also only use 1/2 cup of sugar and add a tsp vannilla essence,family love it.
Today i went back to basics and made the basic loaf on Programme 1.from the white leaflet that came with the machine,it looks very very nice,ive not sliced it yet.just wanted a change from my usual rapid white loaf,programme 2 loaf or the French loaf programme 5.Slimming World..Wk1,..STS,..Wk2,..-2LB,..Wk3,..-3.5lb,..Wk4,..-2.5,..Wk5,..-1/2lb,Wk6,..STS,..Wk7,..-1lb.

Can anyone tell me if the Kenwood BM450 can bake yeast free Rye bread? I am supposed to be on a wheat and yeast free diet.
