Can u Freeze Scones?

  • Used to work with a chef who made fantastic scones - he would make the dough, separate into scone portions and freeze it at that point. He would only take out and defrost what he needed, when he needed them.

    I think I know the answer to this one, but I would love some reassurance/hand holding!
    If I make scones tomorrow and fill them with whipped, double cream and jam will they be ok for freezing and then popping in DH's packed lunches during the week? I suppose I am wondering about the consistency of the cream after freezing, would it 'split' (if that's the term) and make my scones watery?
    Thanks in advance-because I know I can rely on you lot!:D

    My mum would probably say yes, because she freezes whipped cream and puts it on scones, but I (and my siblings) think it tastes both watery and grainy so I would say no. All in all, it seems to depend upon preference, so, I say try one and see what you think!

    I don't buy cream, so can't help there, but I have froze cheese scones before and they were fine.

    So I would freeze the sweet scones, then defrost one or two at a time and spread with jam when you do the pack-ups

  • Oh dear, that's what I was afraid of! Nevermind, it's only DH, perhaps I'll have a bit of an experiment with him as my guinea pig! I have quite a large tub of double cream to use up. It's been open a few days and I don't really want to leave it in the fridge much longer. I also have an enormous stash of plum jam and I was hoping to kill two birds with one stone (not one DH with two scones:D).

    Can you not freeze the bare scones and make them up with jam and cream as and when you need them?

    I could, but the reason I wanted to freeze them filled, is that I have a large amount of double cream open in the fridge, it has been in there a few days and I wanted to make it into something and then stash in the freezer....also I gave had for the last week or so a bizarre hankering to make scones- especially strange as I'm not really that keen on them!

  • You can freeze whipped cream. I have not tried filled scones but if I have spare double cream i usually throw together some individual trifles, made with triflesponges filled with home made raspberry jam, topped with frozen raspberries and slug of marsala, tinned custard (you can freeze tinned custard)and topped with fresh whipped cream.

    I would also try open freezing some portions of whipped cream and store in containers. This might be a good way of having scones in a packed lunch.
  • Well I've made my scones and amazingly they look really good! Used the recipe from the British Bake off book one and it actually worked. There are only 7scones admittedly on the big side, but I can't see them using all that cream. I will fill and freeze a couple, just to see.

    Kleopatra, excellent idea! I have all the bits and bobs for trifles, I even have lots of little individual, clear plastic, lidded pots (saved from the takeaway days) so now I know what to do with the remaining cream. I can make lots of little, individual trifles. Thanks:D
