    Thanks for responding! I used double cream and I have about half of it left. I might try freezing it rather than throwing it out to see if it freezes and thaws alright!

    Hubby got a pack of 12 eggs last week BOGOF and they will be out of date in a weeks time. Therefore I made pancakes, scones, french sandwich, swiss roll ... last night to use them up. We are going to Paris tommorrow and wont be back until there is only a day left until the eggs are out of date and I would not use them that close to their date. No point making quiches or anything like that in our house as hubby has a sweet tooth! I would never have considering making all these things if it hadn't been for this site. Thanks to you all for helping me as I enjoyed baking and hubby even helped! :cool:

    I always use eggs after their sell by date, it may sound really bad but I've used them months after the sell by date. If you're not sure then open them into a bowl instead of straight into your cooking, if they're bad I think you can tell by the smell. So far I've never had any egg problems.

    Scones freeze beautifully.I "open freeze" them on an oven tray so that they don't touch each other & when they are frozen they can be placed in a freezer bag thus taking up less room.Defrost to room temperature & then microwave for about 30 seconds for that "just baked" effect.
    I have never had a problem with bad eggs & that is when they have been sitting in my fridge for 4 weeks or more.

    If you have a batch of pancakes, you might want to interleave them individually with baking parchment before freezing, so it is easier to take them out a couple at a time.

    I find it works for me.....

    I wish I'd seen this the other day as I've just thrown out half of a huge pot of double cream cos it was past it's sell by :rolleyes:

    Not that there's much room in my freezer anyway LOL!!

  • Question in the title - if I make them then everyone stuffs their face, and they're all gone in a moment. So can I make them and freeze some?

  • Yes, definitely. Maybe freeze them in batches of two or four, so you don't have to take out too many at a time ?
