Quick update for anyone interested. The defrosted, filled scones got the thumbs up from OH, and even I quite liked them (not much of a sweet-tooth). We didn't find the whipped (double) cream grainy or watery but I had whisked in some icing sugar so maybe that had a stabilising effect?
I would definately freeze them filled in future. Thanks for all the suggestions.
Oh and the little mini trifles went down a storm too:D0
