    Hello everyone.

    It's been a while since i've posted, hopefully I have posted in the right place!

    Steaming a Christmas pudding - none of the recipes I trust say if the lid should be on or off. Can anyone help? It's on an upturned saucer on the hob at the moment. What do you think? It's got another 4.5 hours to go...

    It's covered with baking paper and foil and tied with string but no lid on the saucepan. I think that if it should be covered it would say, but another school of thought is that the steam needs to be trapped in the saucepan to cook it. BUT if this is the case wouldn't it find it's way into the pudding and make it too wet? Not to mention the condensation falling onto the foil and paper?? Wouldn't that be heavy and push down on the pudding and pulling the edges up and in? I checked Delia and she doesn't say to cover with a lid or not either.

    I hope you guys can help

    I always use a lid. Keep checking the water too -it may need topping up at regular intervals.
  • Definitely cover with a lid and check the water is still there every now and again.

    Definitely lid on - or your house will look like a sauna :) It doesn't make the pudding too wet, as the steam doesn't get past the string.

    Just a quick question as I think I'm going mad...

    ...I've been steaming my xmas pud for 5 1/2 hours now and the recipe i've been given says 5 hours.....i've checked it's not yet cooked by inserting a skewer into it and it isn't coming out clean....that is the right way to check if it's cooked or not isn't it?

  • Hi I steam mine for 3.5 hours then remove. Remove the greaseproof paper, wipe the lid and allow to cool until entirely cold. THen put on a new piece of greaseproof paper, ensure no wetness on the inside of the lid and replace the lid. Store in a cool dry place until Xmas .

    Steam for 3.5 hours on the day you want to eat it.

    This works for a large pud 1.5 litre bowl.

  • i put mine in the slow cooker this year coz my pressure cooker broke . cooked it perfectly overnight :)

  • Mine normally is steamed for 7 hours before xmas. I mean really steamed, bobbling away on the stove. The skewer will be damp, due to the water.

    Take off steammer, remove the baking papaer and foil. Top should be spongy,m but will go hard as it sets. This is normal. (At this point and spirit, BoP recommends RUM!. Top with baking paper when cool, then cover with foil.

    On Xmas Pud day, we serve ours at 6 pm. Steam for 2 hours before, this will finish the brew. Remove from bowl, sprinkle with icing sugar. Top with BoP niceties, RUM, Lite and watch her sizzle and glow. Kids love it. Make some RUM sauce, recipe later, and enjoy.

    BoP recommends that liting of puds is taken with extreme care.
