Just a quick question as I think I'm going mad...

...I've been steaming my xmas pud for 5 1/2 hours now and the recipe i've been given says 5 hours.....i've checked it's not yet cooked by inserting a skewer into it and it isn't coming out clean....that is the right way to check if it's cooked or not isn't it?

    Thank you for any replies:question:

if you've steamed it for that length of time it will be cooked. you dont have to steam it again on christmas day, just microwave each portion as needed, saves a lot of time and energy!

Christmas pud is moister than cake so the cake-testing method with a skewer won't work. So go by what the recipe says.

You won't have damaged it by steaming it too long though, christmas puds are nearly indestructible.

skewer test is more for sponge cakes, http://www.wikihow.com/Test-a-Cake-to-See-if-it-is-Done,
Steaming time is worked out according to the volume of your pudding, which you don't give us, (recipes usually give size by the capacity of the basin in pints or litres) but which remains pretty much the same through history so I have to admit I double check the time by volume by looking at another recipe and then just trust it. I couldn't be bothered with all the unknotting of string and removing and replacing of greaseproof/silicone paper and foil to be honest!.
The 'cooking' on Christmas day is really reheating and can be done in a pan of water, a pressure cooker or a microwave.
  • Probably been asked before but is it ok to freeze in portions?

    Thanks :j

I have (and do) :) (if you won't eat it all in one go then cut to the size portions you need, defrost and the cook as per the instructions).

Yes, or crumble up and stir into slightly softened vanilla icecream. Mmm. This looks great if you line a pudding basin with cling film, then pack the icecream in, freeze a bit more then turn out of the basin. Like a Christmas pud but made of icecream!

  • No, our homemade one stays on shelf in dish, with cover until eaten, normally finnished in 8 servings by August Bank Holiday.

You can make Xmas Pudding Muffins too with a bit of leftover pudding. Just use a standard muffin mix, and crumble the pudding into the mix instead of any other fruits.
