He usually hates spag bol and complains when i make that. So when he asked for it, i jumped at the chance (there are 2 left over portions in my freezer for my lunches next week) that was his chance, next time he has to have it for dinner! no choice!

You can use bits of leftover chicken to make a stir-fry with loads of veg and either rice or noodles. If I was making a stir fry for two from scratch, I'd only use one chicken breast.
I also do a version of jumbalaya that's yummy. In a casserole dish, fry an onion then add some peppers and garlic and enough rice for two and fry that off for a couple of minutes. Add a tin of tomatoes, chicken stock, courgettes, peas, some thyme (dried or fresh), seasoning. I also add some cooked carrots (or a tin). Slice in a couple of frankfurter sausages and some of your leftover chicken bits. Cook in a lowish (190) oven for about 45mins. You can experiment with the veg (depending on what you have in) and the amount of liquid depending on whether you like it quite dry or more like a risotto.
I buy packs of frankfurters and freeze them (99p in Lidl) as they are great for those who must have meat taste in pasta or making a quick sausage sarnie at lunchtime.
I think the secret to preventing OH (and my!) boredom is not to do as they did on Economy Gastronomy but to freeze leftovers/batch cooking and have them once a week for several weeks rather than a samey meal for days on end.

Haven't read through to the end yet, but if you need to improvise a thermos flask, do what they used to do in wartime. Take a jam jar or Kilner type jar with a tight lid,wrap round tightly several layers of newspaper and keep in position with several thick elastic bands!0

Left over chicken makes a lovely curry, especially Jalfrezi.
I used to do a coconut milk / lime sauce for chicken, cooked left overs would be fine.
Basic idea is:
spring onions gently cooked in a little oil, add 1 tsp ginger (fresh or dried), lime juice, chopped coriander and chilli.
stir-fry for 1 minute, then add the coconut milk, cook for 1-2 mins.
add the chicken pieces and stir-fry until they're cooked through
Serve with rice or noodles.

fish and chips tonight.. that was the last of that from the freezer. Got 3 chicken breasts from Mr S for 3.99 today, tomorrow we're doing potato bake, and oh can have 1 chicken breast and veg, i'll skip the meat. that leaves 2 for next week.
What can i do with my leftover chicken from my roast? i've got 2 chicken pies in the freezer so don't really want to do another pie, any other ideas?
chicken rissotto (fry off onion, put in 180g rissotto or long grain rice, stir, add stock, stir, add chicken and frozen peas after 15 mins, add some grated parmesan at the end.
chicken curry, either make a base of onion and tomatoe and spices or buy a jar
another roast dinner, with veg, gravy, yorkshires and roast pots
