I think I'll open a tin, mix it with some blitzed dessicated coconut and try and reduce it down a little. I've got some tubs specifically for freezing portions of coconut milk which are empty at the moment so it's no big deal really. Beware of the lightning bolt ;)
that sounds like a plan :)

looking at the recipe, you could probably just reduce the 2 1/2 litres of water a bit to save you reducing the coconut milk?

tubs for specifically freezing small portions? I thought it was only me did that, glad I'm not alone :A

PS ... I'm taking no chances & am sheltering under my dog-eared first edition of the Saint's Cookery Course ;)
  • Yay! :j Got my book today. Changed my weekly menu plan so we can try the lamb doner tonight. So excited!

Made the "Mega Burgers" for dinner tonight and they were a big hit. I served them with some frozen french fries and I also made the Chocolate Milkshake from the book.

The milkshake could have done with a little more ice-cream in it to make it as thick as McDonalds but I had to guestimate as it was quite hard to measure solid ice-cream in fl oz. It was still very nice though. :D

I think I'll have to give the book a rest for a few days, in one week we've had Donner Kebab, Southern Fried Chicken and Mega-Burgers. :o

Off to the Chinese supermarket on Tuesday to pick up loads of spices and ingredients so we may have a curry next week. :p

  • I'm so glad I found this thread. :j

I've ordered a copy of the book myself as the recipes sound yummy & can't wait for it to arrive so I can wow the kids. :A
I'd rather regret the things I've done than regret the things I haven't done.

Reducing the amount of water would have worked, shame I never read it before I made it :o It seems to have worked though.

I hope you have a better cookbook hidden underneath it :rotfl:Although I must confess my Delias Christmas cookbook is very dog eared too

it's not a lot of coconut cream in proportion to the other ingredients, so shouldn't make a lot of difference to the consistency

I'm debating having a go at this sauce & comparing it to my usual one
which does make a mean Bombay Potato

I thought everyone did the same ;)
I'm obsessive :o I even bought a silicone thingy for freezing baby food in 50/60ml units so I have bags of chicken stock, pizza sauce, vegetable cooking water etc in handy little portions

oh I've still got some old favourites out of it ;)
but I'll be safe, I have faaar too many cookbooks, there was a thread a while ago about how many everyone had, I counted 80-odd even after a cull, & I've bought quite a few since then :o
but I recently read about someone who had 1,400+

 It won't let me quote you!!! Swan.

I think you should share the bombay potatoes recipe for all the other takeaway secret followers ;).

:rotfl::rotfl::rotfl:I posted on the crochet thread earlier and debated whether or not to confess I'm slightly (???) OCD. Decided not to but I guess I'm 'fessing up now :o BUT is it??? Or is it simply having a passion? I like the passion idea best.

I refused to read the 'How many cookbooks do you have' thread past the first post, simply because I didn't want to confess and I also have dozens of good food mags but didn't know if they fell into the category of cookbook. Next to st Delias christmas book, I've used more recipes from the takeaway secret book in a short period of time than any other cook book I've ever owned. For me that's a huge thumbs up.

ETA : Incidently and not that I NEED one of course, where did you get the handy sounding 60 ml silicone thing?

oh it must be because I did that posting within a quote thing, sorry :o

I promised to watch a movie with my (grown-up) kids tonight, so I'll post the Bombay Potato recipe tomorrow, there shouldn't be a copyright issue, as you'll be using a different base sauce ;)
(but if it's not nice I'll have to find a way of getting 'my' sauce recipe to you)

    passion is goood, yes :D
I'm OCD about food stuff too, but strange things ... I mean I'll eat 'out of date' food, but don't touch my knives

& mags are legitimate, they have recipes in don't they? ;)

I got the baby food thing on ebay, but I know you can get them in the shops ... *goes to see what the brand is* ... Beaba? I'll see if I can find a link ... HERE'S one (mine's pink)

'kids' are messing about, so I have time to post the

    Bombay Potato recipe

1 +1/2 pounds whole new potatoes or larger older ones quartered, cooked
4 Tablespoons oil (less if you prefer, but it's nicer with all 4)
    8 Tablespoons Basic Curry Sauce*
2 tomatoes roughly chopped (I've used half a tin successfully, & frozen the other half for later)
    salt to taste

    Spices
    2 teaspoons garam masala
    1 teaspoon turmeric
1/2 - 2 teaspoons chilli powder, to taste (try 1/2 first)
1/2 teaspoon mango powder, from Asian grocers, keeps forever in an airtight container

    1) heat the oil & stir fry the spices for 30 seconds, then add the Basic Curry Sauce

    2) stir fry for 2 minutes, add tomatoes & simmer for 5 minutes

    3) add cooked potatoes, simmer till hot, add some water if you think it needs it, salt to taste

I've used raw potatoes, added them at stage 3 with enough water to cover & simmered till done & sauce is reduced enough

*please bear in mind, I use a different basic sauce recipe (Curry Queen has another, I'll get a link if you need it) so I'll be interested to know how it turns out
if it's not good, let me know & we'll work something else out :)

EDIT ... sorry, too old to do metric :o
