  • ive made the southern fried chicken and left the skin on they were very similar in the coating i fried htem to make it "stick" then finished in the oven
    thought i would use a little more black pepper and paprika next time tasty though

    tonight i tried the onion rings Mmmmmm very good
    i tried to make them in the past but they were always on the soggy side these were crispy "dry" and tasty definately make them again we had them with burgers but i used my own recipe for burgers and made buns a la deliah recipe who needs burger king :D

    I have never heard of coconut powder but I guess you would get the same by putting some dessicated coconut into a processor, coffee grinder etc.
  • I made the doner kebab this afternoon ready for the OH to put together so I could have an easy night tonight. I read the other comments and doubled up the ingredients. OH made the pitta salad, red and white sauce and pitta breads. It all tasted lovely although I couldn't comment on how real it tastes because I've never ate a kebab in my life. Big thumbs up from the OH and DS's.

    However, when I went to freeze my second loaf, it had mysteriously disappeared. I looked at the half kebab I'd not managed to eat and it dawned on me. As lovely as it was for my OH to cook dinner for us all, it turned out to be not quite as MS as I'd planned because he'd used both the loaves :rotfl: I was :eek: at the thought of them eating 8 ozs of red meat each!!!

    Delia says that coconut powder is coconut milk powder so I guess coconut milk is closest, but I'm pretty certain you'd have to adjust the liquid in the recipe somehow. I'd probably go with SB44's suggestion and blitz up some dessicated coconut.

    The recipe says 4 tablespoons of coconut powder and 3 tablespoons of sugar (i think) so im not sure what to add now?!

    as dessicated coconut is already sweetened, i'd leave out the sugar (or only add a little)

    But the £3.95 delivery charge makes it expensive unless you have a lot more shopping to do, or can share the cost among friends.

    But if you have an Indian supermarket nearby, you should be able to get it there.

    Edit, Tesco and Sainsburys both sell coconut milk powder

    I have just found this site which gives you alternative foodstuffs which may be of help.

    It does say coconut milk powder is made from dessicated coconut so I would grind up some of that if you have any. It does say an alternative is coconut milk but that may throw all of your measurements out and make the dish too runny.

  • I ended up buying a bag of desicated coconut from sainsburys for 78p and blitzing it with the food processor to make it more powdery and it worked a treat. I still used the same amount of sugar as per the recipe............

    I have to say that I will blow my own trumpet and that it was a complete success!!! It was sooooooooooooooooooooooo yummy and you really wouldn't have known that it hadnt come from the takeaway! Sadly the tikka chicken recipe said it was for 4 servings - me and DH ate the lot lol

    Would recommend this book to everyone I ever see - 3 meals ad 3 successes....best money I ever spent buying this book!!
