The cookies in the back of the book are lovely. I made double (I should have used a BIG bowl - it was a bit close by the end!!) and froze both rolls and am slicing off cookies as and when. Perfect for a quick snack after school or for when I had an unexpected coffee companion the other morning! They cook from frozen in about 15 mins I think. They're all prepared and in the fridge ready to flash fry later then stick in the oven.

Have your tried Twinks Hob Nobs from this forum? They don't need eggs and taste great plus you can adapt them to your taste ie add cinammon, ginger, dried fruit etc.
