I think some people have bought onion granules and garlic granules if they can't get the powdered versions.
Both are available at Tesco and Sainsburys and I bought some from Lidl (can't remember if it was onion or garlic though as it was about 18 months ago when I first bought the book).0 -

TBH, I scoop a bit of the ginger paste out of the jar with the tablespoon, then top the spoon up to "full" by squeezing the garlic puree out of the tube onto it. Nothing remotely scientific about the proportions or quantites. Sometimes depending on what I'm making, I go for a full tbsp of each because I like garlic and ginger more than some of the other flavours in the recipe - I would never have dreamt of getting an indian takeaway before so no idea what it "should" taste like anyway! I like this book because it means I can tweak to make curries and whatnot more suited to the flavours that I like.
Another one frustrated by Amazon's failure with the new one though. :mad:0 -

I haven't made any of the Indian recipes from the book yet, probably because it sounded like a bit of a faff making the base sauce etc.
However, I have found someone on YouTube showing how he makes various curry dishes and extras which may be of help.
It looks like he is promoting an e-book so disregard that and just look at the 33 vids he has on there, I am sure they will help when making your Takeaway Secret recipes.
