Ok, this may seem like a silly question.....I want to have a go at making the banana muffins. The recipe calls for 5oz of white sugar. Do I buy caster sugar or granulated sugar?

Also, I don't have a muffin/bun tray, so can I just double up on the paper muffin cases & place them on a flat baking tray?
Thank you x0 -

caster sugar is fine. Also you can use smaller cases in bun tins, just make more smaller buns instead.0 -
You can buy white sugar and blend it in a mini chopped or food processor? Caster is just a finer texture
If you put bun cases on an oven tray with mix in, they will have no support so may squidge about a bit and come out funny shapes. Well, mine did anyway ! I picked up bun trays in a second hand shop i thinkA little nonsense now and then is relished by the wisest men

I just came back on here to ask if silicone muffin/cake cases would be ok to use on a flat baking tray, as I've seen some in Wilkos (silicone muffin cases) & Poundland (silicone cake cases). Would I need to line the silicone cases with paper muffin cases, or just pour the mixture directly in?
Thank you x0 -
You don't need to line the silicone cases with paper cases, you could give them a quick grease to make sure the muffin pops out.
I never use caster sugar, I always just use normal granulated for all my baking.Dum Spiro Spero0
