    Ok, this may seem like a silly question.....I want to have a go at making the banana muffins. The recipe calls for 5oz of white sugar. Do I buy caster sugar or granulated sugar? :o

    Also, I don't have a muffin/bun tray, so can I just double up on the paper muffin cases & place them on a flat baking tray?

    caster sugar is fine. Also you can use smaller cases in bun tins, just make more smaller buns instead.

    You can buy white sugar and blend it in a mini chopped or food processor? Caster is just a finer texture

    If you put bun cases on an oven tray with mix in, they will have no support so may squidge about a bit and come out funny shapes. Well, mine did anyway ! I picked up bun trays in a second hand shop i think

    Wilko's usually have them quite cheap, sometimes the £1 shops and if you have a Home Bargains nearby, they sometimes have them too.

    :D I just came back on here to ask if silicone muffin/cake cases would be ok to use on a flat baking tray, as I've seen some in Wilkos (silicone muffin cases) & Poundland (silicone cake cases). Would I need to line the silicone cases with paper muffin cases, or just pour the mixture directly in?

    You don't need to line the silicone cases with paper cases, you could give them a quick grease to make sure the muffin pops out.

    I never use caster sugar, I always just use normal granulated for all my baking.

    seconded :)

    ordinary granulated sugar is fine for muffins, no need to buy the more expensive caster sugar
