    Has anybody got any suggstions, how to moisten the meat?
    It tastes great,but it's so dry!
    I'm armed with a 2.5L of the best chilli sauce on the planet, secured from my local kebab shop. I didn't like that red sauce nonsense.
    ( Lions - very hot chilli sauce - £ 7.65 for over 2L)
    The meat is still too dry. I'm thinking perhaps drizzle some chilli oil over the meat after cooking?
    Any suggestions welcome.

    I suppose you could wrap it in foil before cooking, that will keep it moist and then unwrap it about 20 mins before the end of cooking time.

    When I did it, I cooked it, cooled it, then sliced it (across the top). Then put the meat on a plate and covered with clingfilm & microwaved, which re-moistened it without losing the nice crusty edges. You can do it one serving at a time or quite a lot at once.

    When I reheated mine, I did it in a foil package with some water in the oven. The water obviously creates steam which moistened the meat up really well.

  • Tonight we are having the chicken tikka masalla, chicken pakora and turmeric rice. The sauce is simmering away at the moment. Ds is making meat samosas to go with it. I hope it goes down well.

    My OH's not one for cooking and i'm not sure hes ever touched a cookery book in his life, but last night i came home after being out all day, walked into the kitchen and found him with a mixing bowl out following a recipe from the book!!

    He made the southern fried chicken and it was very nice indeed.

    Does anyone have any sort of recipe for the sauce that kfc use in one of their burgers.. its apparently only slightly hot? Does anyone know of one? That would certainly make a certain man very very happy!
  • I had the book delivered last week and am going to attempt the big mac equivalent tomorrow, hope it tastes as nice as the real thing! Really looking forward to it :)

    ok.. i'm sold on the book but this is probably a really stupid question but, as a weightwatcher, is everything sooo high in fat and kcals that i would not be able to touch it?
    Ok, ok, i need to go back onto Weightwatchers, lost 7 stone..... 2 back on, this has to change.....Help!!!:eek:

    The pakora was a big hit. I wasn't over keen on the tikka massalla. I think I will have to tweak that.
