Had a go at making the banana muffins yesterday,but something aint right with them,was not overly impressed.Disappointed as everything else made has gone swimmingly well thus far. Does anyone who has successfully made them have a photo of what they should look like? Mine look like mini brown buns that given a few days could be used as door stops around the house

I made this a couple of weeks ago and it was lovely. I didn't use as much chilli as the rcipe said as was worried it'd be too hot for us...and it would have been!!0 -

Ive made them twice and they were gorgeous, the key is to not over mix, literally just mix the wet ingredients with the dry a little bit, a few light stirs.
Muffin mix doesn't do well with over stirring. Mine were light, fluffy, airy and not too brown on top, just a little brown in colour.DFW Nerd 267. DEBT FREE 11.06.08

Did you mix it for a while or use a mixer to stir it?
You should only stir the mixture for a few turns of the spoon so that the flour is mixed in, it's better for it to be lumpy too.
