I am a big fan of shin beef too - however it needs to be cooked slowly for a long time to tenderise it - but it isnt very fatty at all.
I tend to buy mince from the butchers, and sometimes get a beef brisket joint. This again needs long slow cooking - I tend to seal the outside in a hot frying pan with a little oil (till lightly browned all over the outside) then bung it in the slow cooker with a little bef stock, or a glass of red wine, and maybe an onion and a couple of carrots or pieces of celery for flavour. Its very nice.0 -
I don't usually buy frozen mince but in a moment of madness I recently did, thinking well It's probably the same as the fresh stuff only frozen - it wasn't a dirt cheap brand - it was sainsburys so I thought it would be ok. I was wrong. As soon as it was cooked (I did some spag bol with some of it) it went a really mushy texture - it looked just like cat food! To be fair it didn't taste too bad and I don't remember it having loads of fat but it was very strange.
I have half a bag left - what do you think I should do with it? I'm reluctant to throw it but wondered how to disguise the texture. Any ideas?0 -
Meatloaf? Mix it with some corned beef, breadcrumbs, various finely chopped veggies and an egg to bind. Whack in the oven in a loaf tin until it's cooked and serve with mash and beans.Taking baby-steps :beer:0

When I've bought frozen mince in the past I dry fry it first and then drain it in a sieve, and then return it to the pan and fry it with some oil to help to dry it out.

Don't worry I wont be buying it again! I made the mistake of thinking that as I often freeze fresh mince, it would be ok. If I expected anything, I think it would've been loads of fat, which at least I could've drained. I didn't think the texture would be so different. Oh well, live and learn.0

fry it off with onions, cumin, ginger, garlic and chilli then squish it together and make it into meatballs or kebabs...serve with pitta bread, salad, yoghurt and mint dressing...alternatively fry it off with onions, thyme or sage, add some gravy granules and whack it into some pastry to make some pasties or a pie....nice with tinned marrowfat peas,gravy and tomato sauce....;)0

How about mixing it half and half with good mince? Then maybe the texture won't be so noticable.
We have a longer thread on ways with mince. so I'll merge this in to keep all suggestions together.

so i jsut realised how odd my heading sounds. lol . no i havent turned the boyfriend into mince although am very tempted today. :mad:
Right I have a pack of the 800g value Mr T mince in my freezer that I would liek to use up - basically i am fighting with my freezer door to keep it shut lately.
Well I told bf i would make a shepherds pie for tea - his reply - oh i dont like mince its boring.:eek: Hes always eaten it fine so Im at the sort of stuff him stage now. Only thing is now i have a frozen pack of 800g mince, and its only me who will eat it - its too frozen to break up into smaller portions and im at a loss what to do with it!
I was thinking of making up mince, onion and gravy - then putting some aside and making a pastry - to make a mini minced beef and onion pie,
some for stovies,
then chucking in the rest for a small shepherds pie
but thats all i can think of and to be honest there would still be loads that needed using/doing sometign with and i dont really have alot of space to freeze any!!!! so im looking for as many ideas as possible for what I can do with it.
wish i could part defrst it and then refreeeze it in smaller portions but this wouldnt be very healthy to do so it needs usingTime to find me again0
