Trouble with me is though all my mince is currently frozen (as it would only previously have served one meal). The other trouble is I'm doing Slimming World, so trying not to have meat with pasta/rice or potato!

Any ideas other than burgers (I wouldn't be able to use them all in one go and can't refreeze them uncooked!) I have a can of chickpes in my cupboard unused too and need to put them in something!

    Thanks, Catt xx
  • Hi skint catt, i do slimming world as well. Have you thought of using mince on a red day and having it with butternut squash chips-or Mediterranean style veg? loverly.
I use 500g of lean mince.
    1. meal-usually spag bol bulked out with, peppers, garlic, onions, mushrooms and two cans of plum toms, tomato puree and stock cube. Worcestshire sauce, bay leaves and herbs for seasoning. The same for Quorn.
    2. meal -rissoles. add mince, seasoning of choice, garlic, onions diced finely. Dip in egg and roll in flour to shape into little balls. fry or grill until cooked through and serve.

Thanks - the rissoles sound good. Spag bol I'd have to weigh the spag and I hate that! Hence trying to keep them as 'free' as poss. I did think about chilli with 'cauliflower' rice.
Never tried butternut squash though I love roasted med veg - thanks

SkintCatt you could defrost it, cook it and seperate into smaller portions. Meatballs are good, can do those without pasta etc, just with a tommy sauce.
One day I might be more organised...........

Well done! I usually use the whole 500g on any one meal for us 4 adults.
If I'm cooking for 5 or 6 I pad the mince with soya granules!

I do that too. Make a really good thick chilli sauce and put lashings on it and serve up with rice, and cheese sauce and tortillas. Really tasty.

You could always make a meat loaf, I had a recipe for it some place but unfortunately mislaid. Cook it in the slow cooker over too strips of foil so it doesn't stick to the bottom. Slice it thinly in a meat slicer and it'll last for ages. Have it cold in sandwiches or hot with gravy, spuds and veg. Or you could just cut it up into chunks, add some cooked pasta and make any kind of sauce to go with it.

Theres a link here for meat loaf, plenty good reviews...

You could shape it in a loaf pan, then make two long strips of foil and criss cross them over the bottom of the slow cooker and then place the meat loaf in it so it doesn't stick. Cooking all day low would be fine I reckon.

  • The 'cauliflower' rice is good with curries as well- you can convert the mince to use in a curry and use as well. I like to do mince in a hot Mexican style with red kidney beans, chili and garlic, onion, plum toms, stock and use it on an 8 oz jacket -healthy extra b choice, not kidney beans though- would be free with quorn.
People have also used turnip chips or sweet potato (he B)

    Hi

Sorry if this has been mentioned already (I have read through, but it's very late, lol). I always chuck in a load of red lentils when I'm making mince with a tomato sauce. I cooked a chilli for around 25 people recently and everyone loved it and bulking it out with the lentils worked out much cheaper than producing the pan full with just mince. Thickens nicely as well.

    Hi ashlea,

There's an earlier thread with lots of ideas so I'll have a hunt for it and add your post to it to keep all the suggestions together.

How much lentils/soya do you use with say 250g of real mince??? Do lentils expand when boiled? (Mine say they don't need pe-soaking!) I don't want the kitchen overflowing with them!
