    Morning all :wave:

    I talked to DD about the recipes and she had a look and thought she'd try a chicken dinner at the weekend - but can't find how to poach a chicken. I can't find the instructions specifically about that bit either - please can you point us in the right direction?

    Morning just jumping in quickly to say I am impressed with the new Christmas menu, I try to keep up with this thread but sometimes it romps away from me, I just wanted to ask what plans were underway for the veggie version and offer my services. I am a lifelong veggie, and in a previous life was a chef, (although I don't really shout about it on here), and am willing to give things a try for you, or offer some recipe ideas if you let me know what ingredients are available for it!

    The veggie option for shristmas day is creamy parsnip soup/cream of mushroom soup then cranberry and cashew nut roast and then yule log/christmas pudding.

    If you have any spare time to test those I would be very grateful!

    I also struggle to write recipe methods and they give me a bit of a headache, so any help you are able to give on that would be superb.

    In fact if you are able to look into what I have missed out of the yule log that made it tricky for kezlou to follow, that would be a huge help.

    I'd better stop there or you'll never offer to help again!:rotfl:

    Hi, just poking nose round the door here- saw mention of the xmas recipes on OS and want them! :) I dont/cant/hate to cook so no use me being here really, but I am interested in getting/keeping food costs down as much as poss. I do get ideas for my limited cooking skills though so thank you !

    today I shall be making french onion soup, slow roasted pork shoulder and chocolate brownies, tomorrow will be mushroom soup and pork tortilla wraps.

    Many thanks Weezl. I'm a veggie and hadn't paid that much attention to it, and when I started looking for methods online for DD they all seemed to want bacon, loads of veggies and all sorts of things. I'm curious; why is the water replaced - is that to do with taste or to kill the bugs?

    Cranberry and cashew nut roast I think sounds scrummy!

    Just a quick report back on the toad in the hole. All the men enjoyed it. It was very filling and their plates were piled high! I made 1 and a half times the quantity as we have 6 adults. It is the first time I have made Yorkshire pudding/toad in the hole batter with self raising flour. It didn't rise in the same way as plain flour does but it was a tasty special meal particularly for the men.

    I am waiting for my Asda delivery so can't make the houmous or eggy bread today. DD and I are going out to collect 6 rescued hens later. Hopefully we will have eggs tomorrrow!!

  • My pork has arrived and it is 2.78kg instead of the 1.8kg! They haven't charged me any extra but it now means a very early start tomorrow.

    I would suggest in the timings for the meat maybe a mention of how many minutes per kg in case it happens to other people. I usually cook pork shoulder at 45 mins per lb, after the initial high temp roast, so will adjust timings accordingly.

  • ok Ive been abit busier in the kitchen and have made the mushroom soup. onion soup, chocolate brownies, the pork is roasting in the oven as is the stuffing.

    Both soups have gone down well with all family members and the remainder we will have for tomorrows lunch. The chocolate brownie is cooling on the side but im not sure if it is cooked enough as when its touched with fingertips its crusty on the outside and stodgy on the inside? Is that how it should be? Will leave to cool fully before poking it again!

    Will give a verdict later tonight reference the pork and stuffing, yorkies and the gravy.

    Also forgot to mention that I didnt have any grease proof paper so I oiled and floured the tin, brownie came out of tin no problem, going to cut it into squares now and im sure it wont be long before I can have a verdict for you (Does smell rather yummy though!)

    Just a quickie though..........how long does the stuffing need to be in the oven?
