    re: crab apples... I vaguely remembered that Weezl did a "sour apple bhaji" a couple of years ago, so I have searched for the recipe (in case it could be adapted to crab apples, possibly in conjunction with other apples), and here is the link:

  • Just thought I'd report back on the walnut butter. My OH made us half a batch on Saturday but I have only just gotten around to having some before he scoffed it all. It's GORGEOUS!! :T

    Reminded me of a tiny little jar of something similar that I had bought from Holland and Barrett a while back that cost £3.50. We put ours in a sterilised jam jar in the fridge but will definitely make a full batch next time and freeze half.

    Very nice :) 8/10 for the burgers themselves from !!!!!!, which means he considers them as nice as a veggie meal could possibly go. Only 6/10 for the meal as a whole though, because he feels that without gravy or baked beans the dish is too dry.

    I did up the chilli somewhat - doubled it, in fact - and that made them really hit the spot for me, too.

    Unfortunately, I will not be able to do calzone tomorrow, as I'm out with DD all day, and have not been able to do the whole batch ahead today (which is the way I want to test them this time) as the veggie burgers have had the last of my carrots. So I swapped the planned meals for tomorrow night and Weds, which means I'll be testing the carrot loaf/calzone batch on Weds, and tomorrow we'll have savoury rice with chickpeas and chorizo (an adaptation of a recipe from this month's Asda magazine that will use up various odds and sods littering the fridge atm).

    A mixed reaction here for the veggie burgers. DH thought they were lovely, and gave them 8 out of 10. For me they were a 6 - I'm not overkeen on the mouth feel, which I found a bit claggy, probably due to the oaty stuff.
    The only adjustment I made was to use a finely chopped red chilli instead of chilli powder, as it was lurking in the fridge. I'd definitely agree with Allegra that this dish is in need of plenty of spiciness. Don't scrimp on the flavourings.
    I made a half quantity, which yielded 6 good sized burgers. This was ample for DH and a bit too much for me - they're very filling.
    One tip which might be useful - I floured my hands before shaping the burgers, which made them a bit easier to handle.

    That reminds me... I forgot to report back on the sweet bread I made with the walnut spread (with which we were less than enamoured, although we would have eaten it quite happily if financial circs had so dictated).

    I made a loaf's worth of white bread dough, and included a couple of tablespoons of sugar in the dough. Then I rolled it out, and spread the walnut spread over it (3/4 or more of a half-batch), sprinkled on sugar and cinnamon and apple (two large Granny Smith, peeled and chopped). Another sprinkling of cinnamon and sugar, then I rolled it up like a fat Swiss Roll, glazed it with milk and sugar, and let it rise for a bit. Baked it at 200ºC for 15 mins, then reduced the temperature to 180ºC for another 15 mins (it was getting a bit dark on top).

    I had initially intended to cut the roll-up into slices and cook them flat, like spiral cinnamon rolls, but when the time came, I couldn't be bothered. The end result was lovely. "Marvellous", according to my husband. And it made an absolutely huge loaf, so there was masses of it left even after everyone had greedy seconds.

    From other people's very positive reactions to the walnut spread, it seems highly unlikely that anyone else is going to be seeking ways of using it up. But for anyone out there who, like us, isn't keen on the background oil flavour, rest assured that the spread can be used in baked goods to excellent effect (with zero wastage of ingredients, and total eating satisfaction). And I am sure there are many other breads and pastries that it could be used in, so the possibilities are endless.

    Hello All!!!!

    Considering we had such a good meet recently I am wondering if we could have another one???

    I was thinking this one could be more chat-centric as that would be lovely so maybe a pub/restaurant lunch? I was looking at central locations and considering maybe Leicester, or surrounding areas and wondering if people that didnt come to the last one would find that easier??

    I didn't get to do the veggie burgers tonight, I went out for the afternoon and was too tired when we came home.

    I came up with a tasty leftover recipe for the nut roast - slice it, fry it in some oil/butter, keep warm whilst the left over bubble and squeak gets the same treatment (I didn't fry it last night), serve with some baked beans.

    We'll have the veggie burgers tomorrow.

    ETA - I'm planning on making Cornish Pasties for a weekend away so I'm making them for lunch.
