Mad Dog Woman ... cracking pics :D
  • I must admit, I am struggling with fitting the tomato and olive pudding into our meal plan, as that's one that !!!!!! has stated catgorically will not try ! I do want to try and find a gap where I can wedge it in for me to try though....

  • I think what you are doing is admirable and there are some great recipes in the meal planners, but I'm struggling to understand how you make up your 'five a day'. For example you class pizza, calzone and tomato & olive pudding as all having 'more than three of your five a day', but I can't see how they have three full portions of vegetables in each serving?

I wasn't involved with those calculations so I can't answer this on behalf of the team/project. I'm sure somebody with the official figures will be along soon with a definitive response.

However, by my own calculations (excluding herbs, garlic powder etc), the calzone definitely exceeds three portions a day, the pizza is very nearly three portions, and the tomato & olive pudding is almost three portions if served as directed.

    Calzone
    Fruit/vegetable content = 800 g tinned tomatoes, 30 g tomato puree (which because of its concentration is equivalent to 120 g tomatoes), 100 g onions, 30 g olives
    Total weight of vegetables = 1050 g, or 262.5 g per head (serves 4)
One portion of F&V is 80 g, so this is equivalent to 3.281 portions of F&V per head

    Tomato and olive pudding
Fruit/vegetable content = 400 g tinned tomatoes, 60 g olives, 50 g red lentils (which are dried so are equivalent to 100 g once edible)
    Total weight of vegetables = 560 g, or 140 g per head (serves 4)
One portion of F&V is 80 g, so this is equivalent to 1.75 portions of F&V per head for the recipe as written.
However, the instructions say to serve it with 80 g of carrots per person, which adds another portion and brings the total to 2.75 portions per head

    Pizza
    Fruit/vegetable content = 300 g onions, 2400 g tinned tomatoes, 30 g tomato puree (which is equivalent to 120 g tomatoes)
    Total weight of vegetables = 2820 g, or 235 g per head (serves 12)
One portion of F&V is 80 g, so this is equivalent to 2.938 portions of F&V per head

Tomato-based recipes are often surprisingly high in F&V portions. One regular tin (400 g) contains five portions all on its own, and it only takes 20 g of tomato puree to add another one. 40 g of dried lentils (or other pulses) is also a portion in its own right (although the UK restricts the quantity of pulses which can count towards the total).

Sorry I've not been recipe-testing this week, chaps! Real life has been a bit hectic. I will try to catch up over the next few days!

    thank you avocet :)

we have basically used the same maths as you, the only different figure i used was that i read that dried stuff was 25g per portion, and so the lentils in the tom and olive pudding would be 2 portions bringing that dish up slightly. (not by loads though)

The formula the fsa recommmend chefs use is just as avocet has done and you round up or down to the nearest full decimal place. thus those dishes round up to three. Our database spots every dish scoring a three (or above and includes it, and that's why it's there.

I hope that makes sense scrimperjan, but do pop back with any other questions or if that seems unclear :)

have just experimented and made a very acceptable soup for lunch using up some of the runner beans

    400g runner beans
    100g red lentils
tin tomatoes, or equivalent from garden
    huge onion
    garlic
    1 litre water

saute chopped onion until soft, add topped and tailed and sliced beans, saute a little

add everything else and simmer for 20 mins until lentils are soft

    whizz

makes a very acceptable soup for 4 and uses up lots of runner beans. I've run out of freezer space!
