Hello Silver  Arty, Shanks, Jenny, me and some others have all done the Option 1 more or less in full so we'll all be very happy to answer any questions and support you as you give it a go. make sure you make at least one batch of snacks asap to keep those men quiet while you get your head around the rest of the recipes - I would recommend the scones very highly, especially the cheese ones !

For us tonight, though, it was Option 2 and red pepper pasta. I thought it was lovely, !!!!!! thought it "a bit bland". 4 out of 10, would eat it again. Will eat it again if fact - for luncch tomorrow, although he'll get some chorizo and cheese mixed in with it for the occasion.

I thought it was lovely though :) !!!!!! did not have the tomatoes in his, which is definitely where he missed out, I thought - toms were gorgeous with it :T

    Anyway, piccie time:

Incidentally, this was probably one of the lightest Kitty meals (the reason there are leftovers is because I made the full amount), so the red pepper pasta night would be a good night to have a pudding. And one of these days I'm gonna get around to making one of Kitty's puds - there just has been no need so far !

Welcome silver5374, I'm sure you'll like it here.

Ok, we had the red pepper pasta tonight and both liked it enough to have again. It was quick and easy to make, and had a lovely flavour. I couldn't face the pasta mountain, so did 180g, which was plenty and left a small portion for my lunch tomorrow.
I used two smallish peppers, which I grilled until the skins were blackened, then peeled and sliced into thin strips. My sauce seemed a bit liquidy while I was making it, but I didn't fiddle around with it, and it coated the pasta really well.
I even remembered to take a photo for Arty :)

I think this is something that could become a regular weekday evening meal in our house. I would probably add things like courgettes from the garden if they were available, but it's fine as it is. It would have been served with a side salad tonight, but it's raining far too hard to go out and pick anything at the moment!

The pasta amatriciana is a big hit, I possibly over reduced the sauce as it was enough for 2.5 servings. My DH's only comment was that it needed more bacon, I explaining the premise of the recipe he said it was plenty then. Katie wolfed it down.

I stuck the recipe too, no twiddling and was full of flavour, next time I may add some dried oregano as I have it in the cupboard.

I cant get the pics to go small :(, or thumbnail :(
    Bummer
    :(
    ...
    Must keep trying :D
  • I think what you are doing is admirable and there are some great recipes in the meal planners, but I'm struggling to understand how you make up your 'five a day'. For example you class pizza, calzone and tomato & olive pudding as all having 'more than three of your five a day', but I can't see how they have three full portions of vegetables in each serving?
