    Lynsey if you look at post 253 the recipe is so easy and perfect every time plus its done on rapid bake so only 1hour and 55 mins on my breadmaker stays fresh for 5 days tastes great and has no fats in it at all.happy bread making my great nieces and nephews make this when they are here and they sit waiting for it to cook so that they can devour it ,its great as you do not have to weigh any thing just use what ever size cup you want small ,med.large to determine the size of loaf.:D

    Hi, in case anyone is interested my 8yr old did a 'banana' bread in the breadmaker, its more of a cake than a bread but still nice.

    Recipe is

    140ml or quarter pint of milk
    1 egg
    90g or 3oz of butter
    pinch salt
    3 small bananas mashed up (good way of using up over-ripe bananas)
    half a teaspoon of bicarbonate of soda
    140g or 5oz caster sugar
    400g or 14oz self raising flour

    just pop in the bread pan and put on the cake setting, its tempting to want to switch it off before the end of time but ours turned out quite nice, the crust doesnt look nice but dont be put off it tastes lovely.

    Serve sliced with butter.

    Got this receipe from the Trawden Show - so thank you to whoever left copies of their receipe next to their display.

    This sounds great - I'm going to give it a try today!
  • Made the brioche this morning. It definitely needs to be taken out before the end of the cycle. Leave it in and its well overcooked and not pleasant to eat :(

    To contribute: I've made another Wright's tomato & parmesan loaf and got really good results on the Quick setting. Left it in on 'keep warm' for a while but not sure how much that did or didn't affect it.

    Not too sure if everyone is getting the same results, but I find the bread is pretty open and loose in texture, a bit like an Aero.
    Has anyone made a loaf with a finer texture, similar to say a Sainsbury's bloomer??
    If yes, please post recipe.

    Ive found sometimes my bread is too soft to cut and I end up making a mess of the piece of bread, ive had different results each time. I must say though the wrights tomato & parmesan is gorgeous. I think its just trial and error, Im wondering if using other recipes (not from carlton book) will make a difference.

    Yep. Same here.

    Rises fine, looks fine but very open, and i'm not even getting a crumb. More like a crumpet then bread. Very spongy too!

    I used recipe 1 for white bread except I replaced 1 TBSP of oil with butter.

    Any help appreciated.

    I've just done a similar recipe today as the cheap 28p flour, but this time I used Lidl's bread flour (60p 1.5k) and this was much better.

    500g flour
    300ml warm water
    1 tbsp sunflower oil
    1 level tsp salt
    1 level tsp sugar
    7g dried yeast (full packet this time)

    Baked on setting 1, but this time on a 700g loaf and light crust. Best result so far doing it non-packet.

    Has anyone tried just making just the dough and baking rolls in the oven??

    I made some fantastic ( if I may say so myself) cinamon and pecan rolls in the breadmaker today.

    For those having problems with the texture, are you using strong bread flour? that has a high gluten content, regular flour wont ever turn out like a shop bought one.
