Baked mince is always a good one for a cheap Sunday roast!
Take a medium sized pack of mince (even the shops own brand will do) , large onion, any veg you want to hide from the kids, beef oxo and an egg to bind......chop all the veg as small as you can - mix in with the onion and mince - stir in the oxo and egg and shove it all in a loaf tin...cover with foil and bung it in the oven on around 180 for about an hour and a half..take the foil off for the last 20 mins to brown it off..(you may need to drain the fat during cooking)
Turns out of the tin easily and if you leave it too cool for 5 mins it slices well....my kids love it. Great cold in sarnies too!!!

WATER - when I first left home and my budget was VERY tight I used to drink a pint of water before having dinner. The result - end up eating less at mealtimes and get my 7 glasses of water a day.Just had an email saying press release. Can someone tell me where the release key is?0

I just made a great cheap meal from an American recipe site.
I used leftover turkey from yesterday, you could use chicken or pork too.
1 tin campbells mushroom soup
1 tin (or frozen) green beans
1 onion
mashed potato
grated cheddar
Place the cooked meat on the bottom of a dish, cover with chopped onion, next top with the green beans, then grated cheddar. Pour on the soup (dont add water) and finish with a layer of mashed potato. Bung in the oven for 30 mins. The recipe said to add cubes of cheddar to the mash before its ready to go in the oven which I did and it was delicious.
We had this tonight as a late supper, couldnt be bothered to cook more veg so we had nearly half each with some french bread. My husband hates mushroom soup and didnt even know!“A budget is telling your money where to go instead of wondering where it went.” - Dave Ramsey0 -

If I'm not too late, here goes:Sausage Hotpot
Preparation Time: 20 mins + 2 hours cooking. Serves 4.
1 tablespoon oil
1lb Lincolnshire sausages
2 large potatoes, sliced thinly
2 carrots, sliced
8oz mushrooms
14oz can chopped tomatoes
1 tablespoon tomato puree
a dash of Worcestershire sauce
1 beef stock cube made up with 3/4 pint boiling water
1oz butter
salt and pepper
Preheat oven to 180C/350F/Gas 4.
Heat the oil in a frying pan and brown the sausages all over, about 10 mins.
Layer half of the potatoes and the rest of the vegetables in a large casserole dish. Stir in the tomatoes and tomato puree. Season well.
Place the sausages on top of the vegetables. Mix the Worcestershire sauce with the stock and pour the stock into the casserole dish.
Top with the rest of the potatoes and dot the top with a little butter.
Cover and cook for about 1 1/4hrs.
Remove the lid and continue to cook for a further 45 minutes to brown the potatoes.Sausage Risotto
Ingredients:
Rice (long grain)
Tin of chopped tomatos
Frozen sweetcorn/peas
Skinless frankfurter sausages
Put the kettle on. When the kettle has boiled, fill the saucepan to a depth of about one and a half inches. Add about a mug full of rice, and cook, stir occasionally, for 7 to 10 minutes. While the rice is cooking, slice 3 or 4 frankfurters into short lengths. After the rice has been cooking for seven to ten minutes, it should start to swell as it begins to absorb the water. Add the tinned tomatos, and some tomato puree. stir for another five to ten minutes, until the rice is cooked. Add the frankfurters, and frozen sweetcorn/peas. Stir for another 5 minutes and then serve.
Note: If using traditional sausages, brown them under the grill or in a frying pan before chopping and adding to the risotto.~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
