  • Fry an onion until soft, add some chopped veggie sausages and brown them. Throw in some roughly chopped and lightly steamed or boiled veg (parsnip, carrot, turnip) add half passata and half vegetable stock to cover, then allow to simmer until cooked through and thickened. I'd throw in my trademark brown sauce too.

    I would either add lightly steamed or boiled chopped potato with the other veg, or add some boiled quinoa at the end. Or you can put a pastry cover over it, with a little hole to let the steam out and put it in the oven. It would be nice with dumplings too.

    I just wanted to say I made this on Saturday using a slightly different method and it was absolutely delish!!!

    I browned off an onion, 5 cauldren veggie sausages and loads of mushrooms (got about a lb for 30p last thing on friday night from Tesco) for roughly 10 minutes. Then I made up some bisto, enough to fully cover the veg and sausages and throw in about 2 tbsp of brown sauce. I also added a tin of borlotti beans and this stage too. Then I covered and left to simmer while I made up some veggie dumplings which I then added to the pan and left for another 20 minutes.

    I'm not a huge fan of stews but this was absolutely fantastic, really autumnal and warming and my meat eating husband had 3 helpings!!!

  • Yup, excellent thread - we're looking at reducing our meat consumption (been a long time since we were completely veggie, and over the years our diet's become almost entirely meat-based) so this is a step in the right direction. Made bolognese sauce with dried soya mince tonight which was absolutely lovely.
    The ability of skinny old ladies to carry huge loads is phenomenal. An ant can carry one hundred times its own weight, but there is no known limit to the lifting power of the average tiny eighty-year-old Spanish peasant grandmother.
  • Glad my ideas have been helpful for so many of you. In fact, you've been inspiring me to experiment a little with the sausage casserole. Big hit with DH!

    I have some of the recipes still to give you. I will get to it soon. The chickpea burgers are worth the minor amount of faff of making them and the eve's pudding is scrummy although I have to jiggle about with the sugar amounts before I post it as my recipe states zero oz of sugar and I've never really measured it out! (I must have copied it out while doing something else as usual!)

    Had the 3 bean chilli last night and it was possibly one of the nicest meals I have ever cooked!

  • I've not heard of chipotles, but i have used scotch bonnets and they are great. I would certainly recommend them!
