When I was at home xmas day brekkie was always bacon butties, closely followed by posh biscuits and lots of cups of tea! Last year had a go at making english muffins for the first time and we had those toasted with bacon and scrambled eggs. Mum decided that would be our new tradition as they are so nice. I made a batch yesterday and have frozen them. I'll be delivering some to Mum before the big day for them to have and OH and I will have ours at home before going to his parents for lunch. WIll be bacon and mushrooms with them this year as OH doesn't eat eggs.

Please would you share your recipe for English Muffins as I've never even tasted them, let alone made them and I think my (English) DH would probably love them for breakfast.

I use this delia recipe. For some reason it's listed under the sweet recipes section but they're not sweet and go equally well with sweet or savoury toppings - last night OH and I shared one toasted and spread with HM lemon curd.....yum! The recipe includes something like 2oz of lard which is for 'frying' them...personally I prefer to use a dry non-stick pan as they brown too much if you use the lard. I also find its best tu use a slightly lower heat than suggested........my hob settings are numbered 1-9 and I use 4. Oh and 1 other thing....I find they don't rise very well, I always end up getting fed up of waiting and cooking them anyway but they then seem to puff up beautifully as they cook.....as long as you don't have the heat too high.

Sliced cold ham (homecooked) and toast with pickle
Always had it as a child (foreign parent so cold meat for breakfast was normal) and love it

I have one question:I assume that I can replace the lard with butter.Being a vegetarian,I can't use lard.

either bagels and srambled egg with smoked salmon, or eggs benedict, or if I can't be bothered wiht the hollandaise just ham and eggs on toasted muffins - washed down with bellinis!People seem not to see that their opinion of the world is also a confession of character.

we love crossonts and strawberry jam xmas morning also brough pain au choc. my local farmshop sells them frozen ready to bake which is nice.
Thing is dont wnat to eat anything too heavy as have huge lunch and lovley buffet with family in evening plus snacking on nuts, chocs and clementines throughout the day.pad by xmas2010 £14,636.65/£20,000::beer:

I'm sure you could use butter or oild but its only for cooking them in the frying pan and I find it makes them brown too much....if you've gat a decent non-stick pan you really don't need it.0 -
We would normally have a bacon or sausage butty, but i'm thinking something different this year.
Nothing too heavy, and not pancakes as DH does not enjoy them. I was thinking of Eggs Benedict - just the one each with half a muffin.
