    Pippa.S sorry to hear about your mum, keeping fingers crossed OH keeps on having the good days.
    Mrs Twins The "Think Pink" blanket looked lovely just a shame I didn't have enough pennies to bid but well done on the sum raised.

    All the talk of lemon curd reminds me I have a recipe for a cake using lemon curd if anyone is interested. Its one I copied out of my mums cooking notebook when I first got married and have used ever since when I need a quick cake to fill the tin. Must say I haven't used home made lemon curd in it before as that seems like a waste of good lemon curd.

    re the wool shop visit i did have DH with me and hes seen my stash and knows we are supposed to be tightening up on spends so that sort of forced me into being good i think because my stash is split between so many hiding places i forget how much i have.

    Hi everyone.

    Thanks for your totals; I shall do the update later on this morning.

    Well, dare I say it .... it actually feels just a little warmer today. We still have snow on the lawn and the grass verges, but it's very slowly disappearing. After three weeks of sub-zero temperatures, it's about time! I hope it's warming up for everyone in the UK, too.

    Knitternan - I would love the recipe for lemon curd; my DH loves it, and we haven't found it here in France!

    Pippa - hope your mum is feeling better today.

    Mrs Moneypenny - I agree with how difficult it is to justify buying even more wool when you have loads stashed away at home! It's so much better to shop on your own, then you only have to justify it to yourself, and that's a lot easier! Hope the twins are doing as well, as possible.

    Touch wood, my internet connection seems to be behaving itself lately, so I'm keeping my fingers crossed.

    I should be looking after the neighbours' dog this week; they were meant to be going to Guadeloupe (a French colony - the French rarely holiday abroad and, if they do, it's usually to somewhere else that's French!) but their thirteen year old daughter, who has been winning awards in gymnastic competitions, landed badly during one session and broke both her arms, poor thing. Each of the two bones in each forearm have broken, so she cannot use her hands or arms at all. She's had operations and is now in plaster for at least six weeks. She cannot go to school, so her mum has had to take time off work. We're all just wondering if she'll be able to go back to gymnastics, or even if she'll have the confidence. It's such a shame because she was doing so well. The trip to Guadeloupe would have been the first trip abroad for the whole family.

    Anyway, I suppose I had better go and make another cuppa to set me up for the morning.

  • Kathy, it was my lemon curd recipe but its knitternans cake recipe....PLEASE KNITTERNAN - CAKE RECIPE REQUIRED. DH due to return today from Roamin around Rome for the Rugby, so I need to scoot and get the house ½ decent prior to his arrival! Will pop back later.........love and squishy cuddles to you all.

    LEMON CURD

    8 oz white sugar (granulated is OK)
    3 lemons (waxed or unwaxed or anything)
    3 oz butter (ok so I use salted but I suppose it should be unsalted - it won't work with marg at all)
    3 eggs - brown white speckled - mine is dependant on the chooks for size but try to get them the same

    I really don't stress a lot about this as you will see - now I do know that my mammie put the eggs through a sieve but I don't bother - you see what you think.

    METHOD

    Into a large Microwaveable bowl place the butter, sugar, lemon juice and rind (I have a wee nifty kitchen tool for the rind but you can use a grater as well).

    Cook uncovered at 700W (or thereabouts) for 90 seconds then stir and give it another 80 seconds if needed for the whole lot to be melted. Beat the eggs into the above mixture. Cook for a total of 5 minutes stirring after every minute. It resembles double cream/covers the back of a wooden spoon - its done.
    Pop it into warm sterilized jar - this makes me two small jars one for me one for my neighbour or one large jar - just for me slightly over the pound size jar.

    It has to be kept in the fridge due to the eggs, oh and needs to be eaten on EVERYTHING.........TRY not to burn your mouth when tasting it, let it cool a wee bit first eh?

    Thanks, Jean - it sounds easy, cheap, and delicious, all that I require from a recipe! Hope your DH gets back safely and that he thinks you've spent the whole time that he has been away doing housework! Leaving the vacuum cleaner plugged in and the chairs upended on the kitchen table works for me; DH always says 'Oh, are you still at it?' while I swoon like a martyr with the vapours at all that I've had to do!

  • Morning all must try to stop by with my coffee most mornings then I can post more.

    Roamin
    The cake recipe is really easy

    grease or line a 2lb loaf tin
    preheat oven gas 4 or electric 180 ( Mine is now a fan oven so use 160)
    4oz soft butter or marg
    4oz caster sugar
    2 eggs
    5oz self raising flour
    2 tablespoons lemon curd ( I just use a cheap shop one and use approx a third of a jar)

    Mix everything together then into the tin and bake for approx an hour.
    If I make the lemon curd I will double the recipe then bake it in 2 sponge tins for about 20-30 mins and then sandwich them together with the lemon curd:)

    Been knitting a baby blanket but getting bored with it so last night I looked out some of the patterns that I couldn't throw out when mum died and found some preemie ones amongst them. Strange thing is that she didn't knit them for my son who was a little one but went out and bought a load. No idea if she knitted them for any one else but think it may have been for my niece who was even smaller.

    Loving the cake recipe Nan thank you for posting.....unfortunately they do not make lemon curd here and to be honest I can't think I have ever had to 'suffer' shop bought stuff, my grannie and my mammie all made it on the stove top......I did too until I got my first microwave.......had quite a few trial/errors but got there in the end. I also make an orange curd which is great if you can get "sour" oranges....

    If DH saw the vacuum out he would die on the spot.............I sweep then steam mop at least I got that all done, he phoned to say he is having a coffee and is on the the big round a bout that is the Paris outer pariferique (SP) so I will see him about 4.30/5ish, plenty of time to get something sorted for eating......or I could just do a bit of knitting/crochet/sewing up! TOUGH CHOICE.
