Love the cupcakes :T
Did you chill the cake pops before you dipped them in the coating? Falling off the stick may be because they weren't chilled enough, or you used too much frosting?
The candy melts set really quickly, so you need to keep popping them back in the microwave for a few seconds to make sure they're nice and runny before you dip them.
Keep with it though, I bet they tasted lovely0 -
Thanks. I had them in the freezer for around an hour and a half before in dipped them. So maybe i used too much frosting. I will keep trying because i want to make my DD the mickey mouse ones once i have the hang of it.0

you can tell when rolling them, if you have used too much frosting, as they should still be quite dry, and not stick to your hands (unless like me you have hot hands)
also depending on what fat you used in your frosting it can make a difference. marg doesnt freeze solid, so its best to use butter. but really for a first attempt, so you understand the consistencies, its best to use a packet mix cake and ready-made frosting as per the instructions on bakerella

Question about rainbow cupcakes, I tried to make these last night for the first time and about 6 batches later I just couldn't get them right.
Tried it with my normal recipe which has quite a thick consistency and the colour was no where bright enough and the layers were all over the place
Tried with a thinned down mixture and the layering was perfect but the amount of colouring needed to make it bright enough left a weird chemically taste in the sponge!
So does anyone have any idea where I'm going wrong? The frontier is never somewhere else. And no stockades can keep the midnight out.0 -
Hi
What colouring did you use? was it the normal supermarket liquid brands? You will get better results using a colour paste they are a\lot stronger and you only need the tinest amount so the pots last for ages. They look like this

Was just normal food colouring, all the recipes call for normal food colouringbut I'll give it a go, normally these things don't faze me, not even a big deal but it's annoying me, I just want to get it right. Thanks.

I second using proper food colour gel/paste. You only need a cocktail stick amount to get intense colouring and there is such a vast variety of colours to choose from. I invested in a set after using green supermarket in my frosting. I needed to use loads to get a deep enough colour and was disappointed and it left a horrid taste.
I buy sugarflair pastes from ebay

Ooh I made a rainbow cake yesterday and used Wilton Icing Paste - it's expensive at about £2.79 a pot but you only need to use a tiny bit! I got mine from a local catering supplies shop but I think you can buy them at Hobbycraft. I'll post a photo tomorrow x0
