    brilliant - thing is I am going to have to pickle or preserve or freeze quite a lot cos there are so many.

    just made a batch of muffins from your reciepe thanks the are fab. Well they must be good DS (24) has just ate 2 before coming of the kitchen to go back to playing his PS3 and comment was "Mum were did you buy them , can you buy them again"

    Once i had a packed lunch with me for a training event - was surrounded by all these "ladies who lunch" with their m&S sandwiches and dippy things and creamy things.

    I had hm pumpernickel with quark and smoked salmon bits (LIDL reduced) and a raspberry muffin. At afternoon break i had a lovely vanilla cupcake (frozen with quark and icing sugar topping)

    When one of the "very elegant and posh" ladies asked where i had bought my lunch, I smiled and remarked that it was "a darling little place, literally a hop from my desk called "Patisserie Maman""

    Don't think she even clocked that i meant "Home made":rotfl::rotfl:

    btw - at 24 he surely should be rustling up the next batch himself if he thinks they are so yummy - my 10 year old manages these just fine;)

    One of teh bestthings about his site is that the recipes are tested an recommended by real people in real kitchens - and thats what makes them so great because you knwo they are going to work.

    now backto the cucumbers :rotfl::rotfl:

    I don't know wether you can get many indian ingredients in your neck of the woods- round yer iy ain't very cosmopolitan but I can get ghee, so I managed to find a recipe which didn't list quite such specific indian ingredients- but it does only use 1 cup of cucumber.
    You mentioned filling the bath with it which got me thinking about using them as beauty products will google and edit to post ideas later.

    Love the idea of 'Patisserie Maman'! Seriously, maybe you should start selling your cakes?

    I make pickled cucumbers using this recipe:

    It tells you to freeze them but I can't think why if they're pickled, I just out them in the cupboard and they are fine. They are a bit sweet but I like that. Made a big jar last year but then a German friend came for lunch and practically ate the lot so making more this time!

    I saw a recipe in the paper at the weekend for chocolate cake using courgettes - do you think cucumbers might work instead ? Will see if I can find it ! xx

    From last Saturday's Times - Chocolate Cake (with a secret ingredient )

    Ingredients
    3 courgettes ( about 450g) peeled
    250g butter, softened
    250g light brown sugar
    2 tsp vanilla extract
    3 eggs
    125 ml milk
    350g self-raising flour
    1tsp baking powder
    4 tbsp cocoa powder

    Cake tin 30 x 20 cm greased with butter
    Makes about 20 squares

    1) Turn oven to 180C/350F/Gas 4

    Cut a piece of greaseproof paper that will cover the width of your cake tin and add a little bit extra and line the tin with it.

    2) Grate the courgettes finely

    3) Put the softened butter, sugar & vanilla extract into a bowl and beat with a wooden spoon or electric whisk until creamy.

    4) Crack the eggs into a bowl and beat them lightly with a fork.

    5) Gradually add the eggs to the bowl with the mixture. Add the milk and whisk together.

    6) Carefully sieve in the flour, baking powder and cocoa powder. Take a metal spoon and fold into the mixture.

    7) Stir in the grated courgettes and mix well.

    8) Spoon the cake mix into your tin, then bake for between 35 and 45 minutes'

    Test the centre of cake with a skewer. Leave to cool for a while, then cut into squares.
