My jars just sit on the kitchen sideboard - I haven't needed to put them in the dark. Some help for flavoured spirit makers!!! My boss at the pub makes these all the time. Currently has ginger whisky, strawberry vodka, horseradish vodka, chilli vodka, and I'm sure there's a couple more :think: will see at work tomorrow and update!! He puts them into a big bottle or jar and leaves them for about 4-6 weeks (shaking once every couple of days) before he puts them on sale. As far as I can see, so long as the alcohol covers the fruit then it'll be fine!! He has also made apple brandy, mandarin brandy, chocolate vodka, white chocolate vodka, pineapple vodka.....and many more I can't remember at the moment!!! He then puts them into these big glass things with a tap at the bottom so we can serve it easily.
(Best bit is I get to test these out when they're made!! :drool:)

Am looking for recipes and suggestions for flavoured spirits (vodka, gin etc.) eg. sloe gin (which I know about) but other suggestions for summer/autumn fruit would like to try.
