Many years a go we belonged to a wine making circle and took a wine making magazine.
Every few months or so, they would publish a warning that it was illegal to distill wine to make spirits.
Even the method whereby you put wine in an open dish in the freezer and skimmed off the ice crystals as they formed, leaving a fortified liquid behind.I used to be indecisive but now I am not sure.0 -

So, back to the original question! If it was me (not that I have ever brewed gin from scratch) I would be worried about putting extra stuff in at the start, so would rather add flavourings to 'infuse' afterwards. We made some LUSH damson gin last year from cheapo gin and excess damsons. It tasted like flavoured petrol at first, but it mellowed nicely and now tastes gorgeous.:dance: :beer:Trust me - I'm NOT a doctor!0
