    Fairy cakes :D

some people use a 4oz method - of self raising flour, butter, sugar and 2eggs i think? Mine is a bit more detailed - but works for me everytime.

Weigh eggs in shells - weigh out same weight in butter and sugar - cream the butter and sugar so it goes white and fluffy - wooden spoon (some use a food processor or thing), then add one egg at a time, ensuring it is fully mixed in before you add the next one.

Once done add the same weight in self raising flour - sifted through a sieve. I add a teaspoon of baking powder, a teaspoon of vanilla extract and mix. Then i add a good splish or two of milk - and mix through, add by per tbsp or two until it gets to dropping consistency - where it drops off the spoon and is all well mixed.

Bun cases, spoon mix in about two thirds up the cup. You can experiment with jam in some - put a tablespoon of mix in , then half a teaspoon or so of jam , and top off with more cake mix - covering the jam :)

Cook in an oven at 180 for 15 mins or so - depends on your oven. Use a cocktail stick at around 13 mins to check them - if it comes out clean, they are ready. If not , two more minutes. Cool on a rack.

I have made these successsfully with mars bar - cake mix, chunk of mars, cake mix, then mars on top. It all caramalises sticky on top. MMMMMMM!drooling-8.gif

  • Thanks. Just told DD and she is over the moon, she is obsessed with fairies. She may be disappointed if they don't start flying round the room sprinkling fairy dust:rotfl:

She also wants to know if you have a recipe for mermaid cakes:D

  • No window boxes but I'm sure I could find something. I have some chilli plants on the go. I have a large bag of compost for the snails so I can use that.

What are lettuce cut and come again seeds?

Oh i am so jealous, I want chilli plants! I can't seem to get one.

They're um, lettuce seeds you plant, cut it grows, you cut it, more grows back, so you come again :p]

mermaid cake? Are you going to have a go at the buns?!

That recipe will also make a yummy moist victoria sponge, put in two round (or square) greased cake trays, cooked a bit longer :) Sandwich with jam and fresh cream, and sprinkle over icing sugar with a sieve. Looks dead impressive. I made one for my friend, and he couldn't believe i made it! i would use 3 eggs for cake.

  • I have never tried to grow chillis but ages ago we went to wahacca and when we paid they gave us what we thought was a book of matches but it was chilli seeds on sticks so I gave them a go. Not sure I could post you one though;)

How thick am i:o Are they just ordinary letuce seeds?

My god woman you are turning me into Alan Titchmarsh:eek:

I think the mermaid cake may be a tiny bit advanced for me:rotfl:
