Good Luck to Weezl and all the testers, and everyone who has contributed to this thread.

I am looking forward to trying some of the recipes, but as I am only cooking for myself will be reducing the quantities to single portions to start with to see if I like them.

Jenny

hello Jenny! Welcome on board :D fab to have you:T:T:Thave you been reading the old thread a bit too?

Wow a person goes to work for a day and look how fast the thread has moved on.
Frankie you seem to have done a massive amount of cooking well done.

BTW my name is Shanks and i will be doing the planner for myself and ex (he wont be doing the breakfasts and prob not a lot of the lunches). I am doing this mainly to help Shirley but also to cut down on my monthly shop.
My shopping doesnt come til this evening so will be doing my batch cooking on Wed this is unusual for me as i just normally cook on a day to day basis and may do that for some things. I have a job interview on Wed morning so will be doing it in the pm.
Looking forward to this and for the support on here.
Ok waffle over xx

good luck on weds shanks :) and thanks for your generosity in wanting to help shirley :)
I had the book for Christmas. I have yet to make anything from it cus it doesn't seem very thrifty to me :( Such a waste.

Keep up the good work everybody- exciting times!

(Weezl can you please just clarify what the posting situation is for those of not taking part in this stage of challenge? Am I supposed to post here or on old thread? Thanks, I'm not sure which to do :o)

it is exciting isn't it?

I'm still a bit frightened everyone will hate me, but DH said today that he is very proud of me (and us!) and all that's been done. It's only 8 weeks tomorrow guys can you believe it?!

I think the testers are happy with us all migrating here and waffling away, frankie has certainly said so, and arty allegra and poohbear and shanks haven't disagreed! Jenny, any thoughts?

xxx

PS did people feel post 2 was an ok summary of our aims and ideals?

Pasta Alfredo

25g butter
25g flour
about a pint of hot stock
50g cheddar
10g gran padano
1 heaped tsp mustard powder
50g bacon
400g pasta

Make a roux with the butter and flour. Add the hot stock in about 4 goes. Between each addition of stock stir the mixture until all the liquid incorporates into the flour and butter. (If you lift the pan off the heat and beat hard with a wooden spoon after the liquid is incorporated your sauce will be beautifully glossy). By the time all the liquid is added you should have a sauce which will coat the back of a spoon. If not add more water or stock. Stir in the mustard and most of the cheese. Leave a spoonful of cheese for the top.

Fry finely chopped bacon. Add cooked bacon to the sauce and season sauce with pepper and salt.

Stir sauce into cooked pasta.

Put saucy pasta in baking dish. Top with remaining cheese. Shove in oven at 180 until there are nice brown crunchy bits on the top.

thanks Frankie :)

green pea soup using shirley's leftover storecupboard stuff :)

430g green peas (not the dried ones) simmered in just under a litre of water for 20 mins.
1 stock cube
Add half tsp sugar
and some mint if you have it
25g flour
150 ml milk

make a roux with 25g flour mixing the flour directly with 150 ml milk and 300ml more water. Mix the milk mix into the cooked peas and simmer a couple of mins to cook out the flour. Then whizz smooth and season with s+p and garlic if you like :)

Good luck to all the testers. I feel like I know you all and am in your kitchen with you - in spirit anyway - don't worry I won't eat anything LOL.

I am not testing the months plan but have taken so much from you all to be incorporated into my own plan and I thank you all.

Shanks' Eggless Mayo

3tblsp milk (i used UHT skimmed)
250ml oil
1 dessertspoon vinegar (i used malt)
1 teasp mustard

S&P
2 teasp lemon juice (added after mixture was thick due to another tester finding it split)

Whisk milk til frothy add vinegar, mustard S&P then slowly add the oil. Once mixture has thickened then add lemon juice and continue whisking til desired consistency is achieved. Taste as you go along.

shanks shirley has 650 ml oil, so I'm just thinking I'll multiply everything up by 2.5 for a final recipe?

what do you think? :)

I shall wait for Taka to post her oaty cereal bar feedback for comparison but so far not good. It's probably because I didn't put in all the oil required by the recipe but the texture is not good at all. It's very soft and yielding but it's also dry. On the plus side it does not taste of oil. Can we make some garibaldi biscuits instead? The flavour is alright but there is no oaty texture. In some respects its a bit more like bread or a bread pudding than an oaty bar.
Once its completely cool I will try again and report back.
